Rosehip harvesting begins at the end of August and continues until the first frosts, depending on the plant variety and growing area. Frost-touched rosehips cannot be dried, but they are quite suitable for making syrup, juice, compote, etc.
The fruits are collected by hand, very carefully, so as not to damage them; also, during collection, the sepals are left on the fruits to prevent mold from appearing.

How to cook rose hips?
Rose hips, when properly prepared, retain all their beneficial properties. Before using the fruits, it is recommended to grind them, in this case they give up all the vitamins and nutrients to the maximum.
There are several recipes for preparing rose hips, most often decoctions or tinctures are used, to improve the taste you can add lemon, sugar or honey.
Rosehip decoction: wash 100g of fruit, add water and boil for 10-15 minutes, then remove from heat, let sit for 5-6 hours and strain through several layers of gauze.
Vitamin drink with rose hips: take rowan berries, black currants, rose hips (about 200g), pour boiling water over them and leave for 15-20 minutes.
Rosehip infusion: pour 0.5 liters of boiling water over a handful of rosehips and leave in a closed container in a warm place (you can use a thermos) for several hours. This infusion should be drunk throughout the day.
You can also make syrup from rose hips: wash 1 kg of fresh rose hips well, put them through a meat grinder, pour in 1 liter of water, add 1 kg of sugar, put on the fire, boil for about 30 minutes, then strain through cheesecloth or a sieve and pour into bottles, store in a cool place.
How to brew rose hips?
Rose hips can be brewed in several ways:
100g rose hips (4 tbsp), 1l water. Pour boiling water over the well-washed fruits and let them sit in a warm place for 7-10 hours. For this recipe, it is best to use a thermos, you can also take a jar and wrap it well in a warm blanket.
Before brewing rose hips, it is recommended to grind the fruit through a meat grinder or in a blender so that the drink turns out rich and more nutritious.
When crushing the fruit, you should be careful, because the fruit contains small villi that cause slight irritation when they come into contact with the skin or mucous membrane. In addition, the drink with crushed fruit should be filtered through several layers of gauze to remove all the villi, otherwise they can irritate the intestinal mucosa.
Rosehip decoction is prepared in the same proportions as the infusion (1:10).
To prepare the decoction, the fruits are poured with cold water and boiled over low heat under a closed lid for about an hour (during this time, water should be added several times). Then it is recommended to infuse the decoction for several hours, after which it is strained, but it can also be consumed immediately.
You can brew not only dried fruits, but also fresh ones. To prepare the drink, you will also need 100 g of well-washed and chopped fruits, pour 0.5 liters of boiling water over them and let it brew for about 30 minutes. Then pour the resulting infusion into a separate container, pour 0.5 liters of clean water over the fruits, put on the fire and boil for half an hour, strain and combine with the finished infusion, the drink is ready to drink.
Rose hips for children
Rose hips are recommended for children to use in the form of an infusion. For preparation, it is better to use a thermos, pour boiling water over about 30 berries and leave for 7-10 hours. It is better to give a child no more than 1/3 liter per day.
Fresh rose hips
Fresh rose hips are as healthy as dried ones. Fresh berries are usually used to make compotes, jams, jelly, syrups, tinctures, purees, and jellies.
The most common way to use fresh rose hips is to make a vitamin compote. To make it, remove the sepals and villi from fresh hips and cut them lengthwise. Then blanch the hips for 2-3 minutes in hot water and place them in prepared containers (jars).
Pour sugar syrup over the fruits (at a ratio of 1:2) with the addition of citric acid (4 g per 1 l) and sterilize in a "water bath" for several minutes, roll up. It is recommended to turn the hot jars upside down before cooling.
Dried rose hips
Rose hips can be dried whole or cut in half, it is necessary to immediately throw away bruised, cracked or diseased berries, as mold quickly grows on them, which can spoil the entire preparation. It is also worth noting that there is no need to wash the fruits before drying.
Fruits are dried in various ways. The simplest is using an oven - heat to 400C and put a baking tray with prepared fruits (in one layer) there for 1 hour. Then increase the temperature to 600C and dry for about 10 hours.
You can also immediately set the temperature to 1000C and dry the fruit for 10 minutes, then reduce the temperature to 700C and finish drying. To ensure that the fruit dries well, you should stir it periodically or dry it with the door open.
You can also dry them in the attic. To do this, spread the fruits on a tray in one layer, stirring them periodically, and then dry them in a special dryer or air grill.
Properly dried rose hips have a springy skin (it should not wrinkle when pressed), while overdried ones will crumble.

Rosehip decoction
Rosehip decoction is a very effective medicine that helps to increase the body's resistance, improve the functioning of many internal organs and systems, replenish the lack of certain vitamins and microelements, etc.
The decoction can be prepared in several ways:
- Place 2 tablespoons of rose hips (wash and chop well) in a glass container, pour 400 ml of boiling water and place in a water bath for 15 minutes, then cool the broth and strain well through cheesecloth.
- Grind rose hips (5 tbsp), pour 1 – 1.5 liters of boiling water and boil for about 5 minutes, then pour the broth into a thermos and leave for 3-4 hours.
Rosehip syrup
Rosehip syrup has many useful properties and has a beneficial effect on the body.
The syrup helps to maintain youth, rapid tissue healing, normalizes cholesterol levels, increases immunity, stimulates the gallbladder and other organs of the digestive system, has a calming effect, helps to get rid of stress, emotional tension. In addition, rosehip syrup helps to relieve hangover symptoms.
You can buy the syrup at a pharmacy or prepare a tasty and healthy medicine yourself.
To do this, wash fresh rose hips well, remove villi, sepals, seeds, grind with a blender or meat grinder, pour boiling water in a ratio of 1:2 and cook for 10-15 minutes, let it brew for 10-12 hours and strain. Add sugar to the resulting broth in a ratio of 1:1.5, heat over low heat until the sugar dissolves, pour into containers and seal.
You can take this syrup immediately after preparation or store it in a cool, dark place. By the way, this syrup is suitable as a filling for pancakes or pies.
Rosehip extract
Rose hips can be used to make an extract. The most common preparations with rose hip extract are Cholemax, Holos, Holosas, which are prescribed to stimulate the gallbladder, in inflammatory processes in the liver and/or gallbladder (except for gallstones).
Rosehip infusion
Rose hips in the form of an infusion are often used in home treatment. The infusion helps stop bleeding, increase the flow of bile, and strengthen the walls of blood vessels.
Due to the high regenerative properties of rose hips, the infusion helps restore bone and soft tissues, it is often used to treat burns, frostbite, and long-lasting wounds.
The recipe for making rosehip infusion is quite simple: pour 1 tbsp of fruit with 0.5 l of boiling water and leave for 10-12 hours (can be left overnight). It is better to prepare the infusion in a thermos, but you can also use another container, for example, take a jar and wrap it well with a warm scarf.
Before taking, the infusion must be filtered well. Drink half a glass in the morning and evening 30 minutes before meals. The infusion prepared in this way can be stored for no more than two days, then you need to prepare a new one.
Rosehip tea
Rose hips are also suitable for making vitamin tea, which has tonic and immunostimulating properties. Rose hip tea contains flavonoids, which help the body resist infection, relieve inflammation, have a mild analgesic effect, and also help maintain youth.
Rosehip tea is recommended for diseases of the heart and blood vessels, joints, genitourinary system to reduce cholesterol levels, and digestive problems.
There are several ways to brew rosehip tea:
- Pour boiling water (about 1 - 1.5 l) over a handful of rose hips (20-25 pcs) and simmer for 10 minutes. The tea prepared this way has a rich, slightly sour taste, but this method of brewing has one drawback - most of the vitamin C is destroyed during boiling.
- pour 1 liter of boiling water over a tablespoon of fruit (for a richer taste, you can reduce the amount of water), let it brew for about 15 minutes - and the tea is ready. According to experts, this method of brewing tea is the best, since it preserves the maximum amount of useful substances and vitamins.
Rosehip jam
Rose hips are also used to make jam, which has unique properties. First of all, rose hip jam is an excellent means of strengthening the immune system due to the large amount of vitamin C.
Before making jam, you need to remove the pits, otherwise the taste of the jam will be significantly spoiled. Also, the fruits cannot be immediately dipped into syrup, as they will become hard.
To preserve the maximum amount of nutrients and vitamins in rose hips, it is recommended to blanch them in boiling water for a few minutes first, then pour the prepared syrup over the fruit and cook until done. The fruit should be well prepared before making jam from them. As already mentioned, the seeds should be removed, as well as the stalk, sepals, and hairs. Rose hips should be washed well, preferably changing the water several times to completely remove all impurities.
There are several options for making jam:
- rose hips 1 kg, water 1.5 l, sugar 1 kg.
Prepare the syrup - dissolve sugar in hot water, boil for a few minutes, then pour the hot syrup over the rose hips and leave to infuse for a day. After that, pour the syrup into a separate container and boil it, and put the fruit back in it, let it infuse for another 5-6 hours. After that, put the jam on the fire and simmer on low heat until the fruit becomes transparent. Put the cooled jam into sterilized dry jars and roll up, store in a cool dark place.
- rose hips 2 kg, sugar 1 kg, water - 300-400 ml
Cover the peeled and well-washed rose hips with sugar, add water and put on the fire and boil for 5 minutes, stirring constantly and removing the foam. Then remove the jam from the fire and let it brew for 6-10 hours at room temperature, then repeat the process two more times (boil and let it brew), after the third boiling, put the hot jam into sterilized jars and roll up, store in a cool place.
Rosehip drink
Rose hips can be crushed or left whole before cooking. As already mentioned, rose hips contain a large amount of vitamin C, which is destroyed by light, so it is better to choose an opaque container (thermos) for preparing the drink. In addition, a large amount of vitamin C has a negative effect on tooth enamel, and it is best to drink rose hip drink through a straw.
To prepare the drink, you need to take 2-3 tablespoons of dried rose hips, 1 liter of water, and you can add honey and lemon if desired.
To chop the berries, you can use a blender, a meat grinder, or chop the fruit wrapped in a towel with a knife or a kitchen meat mallet.
Place the crushed (or whole, if desired) fruits in a container, pour boiling water over them and let it brew for at least 5 hours (it is best to leave the drink overnight). You can add honey, sugar, and lemon to the finished drink.
If the drink is not prepared in a thermos, the container should be insulated.
Rosehip compote
Rosehip compote is a tasty and healthy drink, and also quite easy to prepare.
To prepare the compote you will need: 500g rose hips, 500-600g sugar, 1l water.
For compote, you should select well-ripened, fleshy fruits that are not suitable for drying, but are ideal for compote. Clean the rose hips from stalks, seeds, and hairs, rinse them well with cold water. Prepare sugar syrup (mix water with sugar and boil for several minutes), pour in the rose hips and boil for 5 minutes. Then add 2 liters of boiling water to the compote and bring to a boil, remove from heat and cool.
Dried fruits are also suitable for compote.
To do this you will need 250g of dried rose hips, 1.5 cups of sugar, 1l of water, a little cinnamon and lemon juice.
Prepare the infusion using a thermos (250 g per 1 liter of boiling water), leave for half an hour, then pour the resulting mixture into a saucepan, add sugar, cinnamon, lemon and bring to a boil, remove from heat. You can add lemon or orange juice to the finished compote.
Rosehip powder
Rose hips are also available in powder form. Whole dried fruits are used to prepare the powder.
This herbal remedy contains a complex of B vitamins, vitamins E, P, A, C, etc., as well as useful microelements.
A vitamin infusion is prepared from the powder (10 g of powder per glass of water, drink half a glass twice a day), which is prescribed for vitamin deficiency, as a general tonic and strengthening agent.
Rose hips for weight loss
