The first thing a doctor prescribes when diagnosing diabetes is a diet. Moreover, changes in nutrition should be radical, and the sick person will have to be careful with most of the previously familiar products. But not everything is so simple: many dishes and products still cause a lot of controversy among specialists. So, some of them claim that rice is harmless and even healthy for diabetes, while others - that rice dishes should be abandoned. Who is right, and what should a person suffering from diabetes do in such a situation?
What cereals can you eat if you have diabetes?
It is no secret that diabetes, unfortunately, is an incurable disease. However, this does not mean that you should ignore the problem: if you do not take action, the disease will lead to more and more complications, and even to disability and death. The main thing is to learn to keep the disease under control, preventing an increase in sugar in the bloodstream.
Diabetes comes in different types:
- Type 1 – insulin-dependent pathology;
- Type 2 is an insulin-independent pathology, which is the most common.
Both types require a special diet, which includes strict dietary restrictions. The term "strict diet" is misleading for many people: for example, some people think that they will have to limit themselves in almost everything, eating only vegetables and low-fat cottage cheese. And any carbohydrates - including cereals and porridges - should be excluded from the menu. Nutritionists are forced to note that this is far from true. And certain types of cereals are not only not excluded, but are even recommended for diabetes.
Cereals are a source of complex carbohydrates. Such carbohydrates have nothing in common with sweets, are digested slowly and saturate perfectly. In addition, cereals help control body weight, slow down the absorption of fast carbohydrates. And, as a pleasant addition, cereals contain a lot of useful components in the form of microelements, vitamins.
Cereals are allowed and necessary for diabetics. Of course, under certain conditions. For example, it is necessary to take into account the glycemic index of the cereal: for consumption, you need to choose products with a low index. The most recommended for diabetics are buckwheat (index 50), oatmeal (index 49) and pearl barley (index 22). No less useful are peas and some types of rice - for example, brown. It is undesirable to eat semolina porridge, millet, white rice for diabetics.
It is also worth remembering: so-called instant cereals in all cases have a high glycemic index, so it is better to choose whole grain options for consumption. Various additives to cereal dishes, such as sweeteners, milk, and butter, also add “harmfulness” to diabetes. It is better to replace such undesirable components with healthier stewed vegetables, nuts, chopped fruits, or natural dried fruits.
And one more condition: you should not eat cereal dishes often and in large quantities. The optimal portion of porridge for a person suffering from diabetes is 150 g (weight without additives).
Is it possible to eat rice if you have type 1 or type 2 diabetes?
Rice is a healthy grain, and there is no doubt about it. However, for patients with diabetes, there are specific criteria for usefulness: it is vital for them that the product has a low glycemic index and does not provoke a sharp jump in blood sugar levels.
According to recent research by scientists, white rice may pose a certain danger for diabetics suffering from type 2 diabetes. White rice has a high glycemic index (from 70 to 85), so it can negatively affect the balance of sugar in the bloodstream.
What to do? Give up rice and completely eliminate it from the diet? Not at all. With diabetes of all types, it is allowed to eat unpolished or steamed types of rice. And with diabetes type 2, it is even allowed to sometimes eat regular white rice, but in an amount of no more than 100 g and no more than once a week. With diabetes type 1, it is better to give up regular white rice.
There are several varieties of rice, which differ in both the method of cultivation and the processing and cleaning. Such varieties have different tastes, colors, and even glycemic index, which is very important for diabetes.
What kind of rice can you eat if you have diabetes?
Doctors advise patients diagnosed with diabetes to refrain from eating regular white rice. Such rice, before it hits store shelves, undergoes a number of treatments, as a result of which it loses most of its useful components, becomes whiter and smoother.
The size of rice grains can be different, small and large. The shape can also differ - for example, grains can be oblong or round.
White rice has a high glycemic index and is easy to digest because it is virtually devoid of fiber. A 100-gram glass of rice contains:
- about 7 g protein;
- 0.6 g fat;
- more than 77 g of carbohydrate content;
- about 340 kilocalories.
It is important that rice does not contain gluten, a protein substance that causes allergic reactions in some people.
Below we will briefly tell you about the types of rice cereal that can and should be added to the diet of a person with diabetes.
Brown rice
With diabetes of any type, it is allowed to cook dishes based on brown rice - it is also called brown, because of the corresponding color shade. Such rice is represented by a record number of the most important and useful mineral components, vitamins - if you compare brown rice with other varieties of this cereal.
Here's what you might find in brown rice grains:
- magnesium, which supports normal functioning of the heart and nervous system;
- manganese, which improves fat and calcium metabolism processes;
- fiber, which optimizes the functioning of the digestive tract and improves metabolism;
- B vitamins, tocopherol, vitamin PP;
- iodine, selenium, zinc, etc.
Due to the presence of dietary fiber, brown rice is especially recommended for type 2 diabetes, as it slows down the flow of glucose into the bloodstream from the digestive system. Fiber also helps get rid of so-called "bad" cholesterol, and even prevents the development of tumors.
Parboiled rice
Many of us have seen on store shelves what looks like ordinary rice, but with a more transparent grain structure. We are talking about steamed rice, which, in addition to a large content of useful components, can also boast of ease of preparation, since it is quite difficult to digest.
Nutritionists compare the benefits of steamed rice to those of brown rice, or its brown relative. Why are steamed grains healthier than regular white ones? This is explained by the peculiarities of the technological process, because regular rice loses all its important components during processing, or more precisely, polishing. And how is steamed rice made?
The grains are soaked briefly and processed using water vapor, applying high pressure. It should be noted that all of these procedures are done before the polishing stage, so all of the useful components move inside the grain, and further drying and polishing will no longer be able to significantly affect the properties of the product. This cannot be said about regular white rice, which loses up to 85% of its usefulness when polishing the upper grain shell.
Steamed rice is useful for diabetes, and it can be included in the menu 2-3 times a week.
Red rice
In recent years, red rice has become especially popular among patients suffering from diabetes. In terms of its health benefits, this cereal is not inferior to other grain varieties. And in terms of the amount of iron in its composition, it even surpasses other types of rice.
The level of usefulness of red rice is not always the same, which depends on the quality of grain cleaning. Minimally processed grain contains a greater amount of B vitamins, as well as other useful components, including minerals. But sometimes the grain is processed too thoroughly: in this case, it loses most of the components important for the body. Therefore, it is better to choose a red unpolished product for cooking.
What are the benefits of red rice?
- This cereal is a strong antioxidant that reduces the concentration of free radicals, eliminating the risk of developing cancer.
- Paracionides, the presence of which explains the characteristic red tint, improve tissue elasticity and eliminate skin hyperpigmentation.
- A large amount of dietary fiber stimulates digestive processes, cleanses the body of toxic substances, and inhibits the absorption of sugars and cholesterol.
- Red rice is an excellent preventative measure against excess weight.
Black rice
Unusual for us, black rice has not only an unusual appearance, but also an interesting taste, reminiscent of a nut. In Chinese medicine, such rice was used as a remedy for diseases of the kidneys, liver and digestive tract.
Black rice contains anthocyanins, powerful antioxidants found in the top layer of grains. Anthocyanins protect cell membranes from damage and neutralize the negative effects of free radicals. What does this give? Firstly, they prevent the development of cardiovascular diseases and malignant processes. Secondly, they optimize brain function and accelerate the removal of toxic substances. Thirdly, they slow down the absorption of carbohydrates, preventing the development of complications in diabetes.
Black rice is considered an excellent option for a side dish for diabetics - in addition, this cereal is rich in proteins - about 8.5 g per 100 g of product.
Indian rice
Sea rice, or Indian rice (aka tibicos, or Japanese rice) has nothing to do with cereal crops: it only resembles rice in appearance. We are talking about a symbiotic group of bacteria belonging to the genus Zooglea.
Indian rice is widely used in folk medicine as a medicinal and preventative remedy: it is used to make an infusion of a cloudy-whitish color with a sweetish-sour taste.
The possibility of using Indian rice for diabetes causes a lot of discussion. Some experts are categorically against this type of treatment. However, there is a whole scheme for treating diabetes with tibicos, which has enough fans. It is believed that such rice, infused with the addition of dried fruits, only helps diabetics:
- gives energy, relieves fatigue;
- regulates metabolism;
- coordinates the activities of the bodies;
- lowers blood sugar levels;
- improves visual function.
The course of rice therapy for diabetes should consist of three important stages, such as preliminary cleansing of the body, taking an infusion of Indian rice and a restorative diet. The use of such a sequence of stages helps to significantly improve the condition of a patient with diabetes. Ignoring any of the stages will disrupt the entire treatment process, and the result may be negative.
Basmati rice
Many people think that Basmati rice is practically no different from ordinary white rice. They are mistaken - these are fundamentally different types. Basmati has a specific aroma and taste, contains many more useful components.
Interestingly, Basmati rice is aged for at least a year, like a fine wine. This results in the grains becoming denser in texture and significantly lowering the glycemic index, making the product recommended for diabetics.
Basmati contains fiber and starch, amino acids and folic acid, potassium, iron, phosphorus, niacin, thiamine, riboflavin with a relatively low sodium content. Such rice provides reliable protection for the mucous membrane of the digestive organs, does not cause gastric hypersecretion, is well absorbed and does not contain cholesterol.
In terms of amino acid composition and the presence of essential nutritional components, Basmati rice is superior to many other types of rice cereal and can be included in the diet for diabetes.
Wild rice
Wild rice grains contain a huge amount of useful food components, as well as a lot of protein - about 15 g per 100 g. Just one cup of wild rice can provide an adult's daily requirement of folic acid. In addition, wild rice grains contain magnesium, phosphorus, zinc and manganese, iodine and calcium, copper, iron.
Wild rice has only one significant drawback – its price. The fact is that this grain is quite rare, and it is harvested manually, which also affects the cost of the product.
Wild rice has a low glycemic index. Its grains are very hard, they even need to be soaked for a couple of hours before cooking. Because of this, and also because of the high nutritional value, this type of rice is especially recommended for patients with diabetes.
Rice dishes
The diet of a person suffering from diabetes is full of restrictions and prohibitions. The patient must adhere to strict nutritional principles, and he will have to forget about sweets and other familiar dishes forever. However, this does not mean that the food should be boring and monotonous. For example, even from rice you can cook many interesting and tasty dishes.
For diabetes, doctors recommend eating low-calorie soups based on vegetable broth, and only occasionally can you allow yourself to eat soup made with low-fat meat broth, cooked in the so-called “second” water (the first broth, obtained immediately after boiling, must be drained).
Try making a delicious rice and vegetable puree soup using steamed rice.
To prepare, you will need the following ingredients: a handful of rice, zucchini, carrots and a medium onion, cauliflower, greens, a little vegetable oil, salt. Lightly fry the rice with the chopped onion in vegetable oil, add the chopped vegetables, pour in water and cook until done. Grind the soup until puree-like, add the chopped greens and salt, bring to a boil and remove from heat.
Boiled or baked fish fillet with rice garnish, as well as rice casserole with lean minced meat, or stew with brown rice are suitable as a second course for patients with diabetes.
We offer you a recipe for broccoli with garlic and Basmati. To prepare the dish, you will need one small broccoli, one medium bell pepper, 2 chopped garlic cloves, a little vegetable oil, 1 tbsp. of fried sesame seeds, salt and herbs. Separate the broccoli into florets, simmer in boiling water for two minutes, cool in a colander, then stew in a frying pan with the remaining chopped ingredients for 10 minutes. Sprinkle the dish with herbs before serving.
For diabetics, rice can be added not only to first and second courses, but also to salads.

Can you eat pilaf if you have diabetes?
For diabetes, pilaf can be cooked with lean meat (for example, chicken fillet), or simply with vegetables. If you want, you can add some dried fruits - for example, rice goes well with dried apricots, prunes, raisins.
The benefits of pilaf for diabetes can be discussed if brown or another type of rice grains permitted for patients with this diagnosis were used during cooking. Steamed rice or Basmati are also suitable, but in no case should ordinary white rice groats be used.
And one more restriction: even permitted cereals should not be consumed more than 250 g per serving. This norm is optimal in order to satisfy the patient's appetite, and at the same time not to harm his health. After all, diabetics are strictly forbidden to overeat - including rice dishes.
In addition, it is necessary to include vegetables in the menu. It is great if ragout, salads, baked eggplants, peppers, tomatoes are served with pilaf.
How to cook rice for diarrhea?
If white rice is contraindicated for diabetes, then for diarrhea it becomes product No. 1. It perfectly soothes the intestines and restores their function. The main thing is to boil it until it is "boiled" and eat it little by little - 1-2 tbsp. every two hours.
What can replace rice for diabetes?
In everyday life, even a healthy person wants to diversify their diet as much as possible. What can we say about patients suffering from diabetes - after all, there are already a lot of restrictions for them.
If you want to try some rice dish, but you don’t have red or brown rice “at hand”, the question often arises: is it possible to replace rice with some other product that is healthy and affordable?
Indeed, in many cases this can be done without compromising taste and benefits.
- Potatoes: contrary to the opinion of many, this root vegetable is not prohibited for diabetes. Of course, if you follow certain conditions. For example, before cooking, potatoes should be well soaked in water. This will significantly reduce the concentration of polysaccharides in the tubers. In addition, potatoes should not be fried. It is best to bake or boil them in their skins. And the third condition: potatoes should be combined with other low-carbohydrate products - for example, with vegetables. This will reduce the glycemic load, and human health will not suffer.
- Pasta: this product is also allowed for diabetics if it is made from durum wheat. It is optimal for diabetics to eat so-called whole grain pasta with bran. It is allowed to eat them 2-3 times a week, as they are dietary products, are slowly digested and have a low glycemic index.
- Buckwheat: both regular fried and green groats are allowed for consumption in diabetes. Buckwheat protein contains arginine, a specific amino acid that stimulates insulin production. And the fiber present in the groats, in turn, slows down the absorption of carbohydrates in the intestines. All these mechanisms lead to the fact that the sugar level against the background of eating buckwheat increases slowly, without a sharp drop, which is very important in diabetes. Buckwheat can be boiled in the usual way, but it is better to simply steam it, and also sprout green grains.
When choosing rice for diabetes, or other cereals, you should always pay attention to the glycemic index: the lower this indicator, the better. You should also remember that everything is useful if you observe the measure: you do not need to overeat, and 6-7 tbsp. of side dish can quite saturate an adult, provided that he eats well on a regular basis.
