Treatment of any digestive system disease requires strict adherence to a diet. Otherwise, no medication or procedure will be effective. Pancreatitis is a disease in which the pancreas becomes inflamed, and as a result, it does not produce digestive juice properly. Both during an exacerbation and during remission, nutrition should be dietary. Soups play a particularly important role in pancreatitis. They have a maximum positive effect not only on the organ itself, but also on its function, normalizing digestion.
Can you eat soup if you have pancreatitis?
Clearly, liquid dishes should be consumed daily. They reduce irritation, relieve inflammation. Provide the body with the necessary amount of energy without putting a heavy load on the digestive tract. Any liquid dishes stimulate the production of digestive juice, enzymes, improve digestive processes and increase absorption.
Soup is a first course that consists of a liquid part. It necessarily contains other components that act as chemical irritants. The body receives the necessary amount of liquid and the necessary nutritional components.
Soups for acute pancreatitis
If the disease is in the acute stage, in acute form, soups are a mandatory component of the diet. In this case, liquid soups made with broth from lean meats have proven themselves to be the best. Clear soups and pureed dishes also have a positive effect on health. If you are preparing a soup with dressing, make it without dressing.
Soup for chronic pancreatitis
A person with a chronic form of the disease has more "advantages" because they can cook a much greater variety. In this case, almost all possible options are suitable, be it a regular broth soup, a milk soup cooked with kvass, or vegetable and fruit broths, or a soup with dressing. The only thing that needs to be observed is to ensure that the soup is not fatty and does not contain a large number of spices and preservatives. It is better to exclude them completely. Also, the soup should not be spicy or too salty. It should be consumed only warm, since both hot and cold products irritate the walls and can provoke an inflammatory process. The use of any oil, fat, spices, seasonings should be minimized. If you have prepared a soup that, according to the recipe, is supposed to be consumed chilled, you should stick to room temperature, but do not eat it straight from the refrigerator.
Soups for cholecystitis and pancreatitis
The optimal dish would be a soup that does not contain fat and spices, freshly prepared, based on a low-fat broth. The broth can be any: bone, meat, fish and even vegetable. In this case, it is worth trying a cream soup, a clear soup, but it is better to exclude soup with dressing completely. Soups made from mushrooms and based on sour cream, sauces are completely contraindicated.
Soup for exacerbation of pancreatitis
During an exacerbation of pancreatitis, broth dishes have proven themselves to be the best. They should be nutritious, contain all the necessary components and nutrients, and at the same time should not put a strain on the internal organs, especially the digestive ones. Soups should include a variety of greens, which are very useful for the body and contain a large amount of vitamins. To prepare broth, it is better to use the bones of large animals, but chicken will not be so useful, since it can contribute to an increase in the inflammatory process. Chicken sensitizes the body, resulting in the release of histamine. This increases the risk of developing an allergic reaction and maintains the inflammatory process.
It is better to cook the soup from beef or lamb. These bones are hypoallergenic. In addition, unlike meat bones, they can be boiled repeatedly. When using the bones of small cattle, they must first be doused with boiling water or lightly fried. Then they are not able to irritate the intestinal walls and increase inflammatory phenomena. The bones must be chopped, while the following calculation is taken: 1 kg of bones are poured with about 3-3.5 liters of water. Heat over high heat, as soon as the broth comes to a boil, screw down, and begin to cook until done and the color is rich. In this case, the surface will be covered with foam, which must be gradually removed, since it is formed from denatured proteins, which negatively affect the body, especially in inflammatory processes. Fat, which is formed during cooking, also has a negative effect. It is especially harmful during illness, so it should be periodically removed to prevent emulsification of fats.
Diet soups for pancreatitis
Diet soups are mainly light dishes on a low-fat basis. Cream soups and clear soups are best. You can even use regular broths with chopped pieces of meat, but it is better not to use soups with dressing. To prepare a soup with dressing, you need a separate broth and a separate side dish. It is better to make the broth strong and rich. It is clarified with the help of a specially prepared draw. It is the draw that makes it possible to prepare a light soup that will not only be pleasant and appetizing in appearance, but will also be healthy. You can be absolutely sure that all harmful substances that could get in with the products were removed during the preparation of the dish, and the products formed during frying were neutralized with the help of the draw.
It also allows not only to improve the quality of taste, but also to remove particles that can increase inflammation or cause an allergic reaction. Also, the drawdown enriches the dish with flavor components, aromatic substances, which significantly improves digestion, and also causes an unconscious reaction, during which a reflex release of saliva and secretion of digestive enzymes occurs. The otgut needs to be diluted with a small amount of bone broth, which must be mixed well. For dilution, use the remaining amount of broth. In this case, the temperature should not exceed 50 degrees. This will allow soluble proteins to quickly and without loss pass into the broth, without losing their nutritional value. In addition, they can be distributed quite evenly throughout the mass. Then, when the broth is almost ready, about 10-15 minutes, you can add roots, onions and quickly bring to a boil. The proteins coagulate very quickly, which leads to the clarification of the broth. The entire cooking process should take place at a low boil. It should be barely noticeable, so that there is no strong evaporation. This will allow you to fully saturate yourself with extractive components that relieve inflammation. Additionally, they stimulate digestion.
When boiling slowly, substances can interact with each other, resulting in a wide variety of flavors and aromas characteristic of high-quality meat broth, and an intensification of color. After boiling is complete, the draw will settle to the bottom on its own, which is a signal for the end of cooking. The heating is stopped, after which the broth is allowed to brew. Fat is removed from the surface, the broth is salted and filtered through a cloth, which should be quite dense. An indicator of the quality of the broth is the absence of shine, fat stains, and a brown tint on the surface. A side dish should be prepared separately for the clear soup, which is poured with broth immediately before serving. Noodles, rice, pasta, meatballs are ideal as a side dish. A bread product is also served. Preference should be given to pies, croutons, and protrifoli.
The puree soup has a uniform consistency. Vegetables, cereals, legumes, and meat products are used to prepare it. All products are boiled separately. They need to be boiled vigorously, until they fall apart. Cereals are also boiled, also until they are completely boiled. Liver, meat, and offal are boiled, fried on both sides. Then all of this, together with the broth, is passed through a meat grinder. If there are various attachments, it is better to use pate grates. Then you need to dilute the resulting mass with white sauce, prepared in advance. Together with the sauce, bring to a boil. After the soup is ready, you need to add butter and salt. All of this is thoroughly mixed and cooled. It should be served at the table, seasoned with a mixture of beaten egg and milk. It should be eaten with croutons. In this case, the best way to prepare croutons is to dry them naturally in the air: the bread should be cut into small cubes and dried.
Light soups for pancreatitis
There are quite a few light soups, but the lightest of all are considered to be cold ones. You can consider milk soup as an option, but only if a person does not have individual lactose intolerance. Sweet soup is often recommended for pancreatitis. Cereals, pasta, and vegetables are best suited for making milk soups. You should also consider: if you use plant-based products, especially cereals, they do not cook well. Therefore, they need to be cooked for a very long time. For example, pearl barley is cooked for 2-3 hours, only then will it reach its best quality. It is better to first cook the porridge until half-ready in regular, slightly salted water, and only then can you drain the water and pour milk over the porridge. If powdered milk is used, it is generally added after cooking, when the dish is almost ready. Sweet soup is seasoned to taste with salt, sugar, powdered milk, and other flavors. You can use honey and jam, various jams. Before serving, butter should be added to each portion. Also, cereals that are difficult to boil are recommended to be boiled until half-ready in crushed form, and only after readiness add dry milk, previously diluted in warm water. It is good to serve this dish with dumplings.
Cold soups include, first of all, soups based on kvass, as well as on vegetable broth. You can cook dishes such as vegetable, meat or mixed okroshka, beetroot soup with kvass. Fresh, frozen and dried fruits, as well as vegetables and berries, are used to prepare sweet soups. Frozen fruits are good in winter. They are sorted, waste and extra parts are removed. Dried fruits are also sorted, spoiled parts are removed. Then they are poured with cold water, you can add sugar to taste, and put on the fire. First, bring to a boil over low heat, then reduce the heat and cook until done over low heat. On average, it takes 10-15 minutes to cook.
Meanwhile, separate the starch and slowly, stirring constantly, pour it into the prepared broth and continue cooking for another 5-10 minutes. The soup is eaten both cold and hot, dumplings, casseroles, and manna are served separately. It also goes well with cream and sour cream.
Soup recipes for pancreatitis
You can try the Zaporizhian cabbage soup: it is not only healthy, but also delicious. It is prepared using pork. First, boil the pork. At this time, start stewing the sauerkraut separately. Before you start stewing it, squeeze out excess moisture. Stew until half-ready. Cut the greens into strips (parsley, dill, parsnips and celery work well). Also cut the onion and carrots, preferably into strips. Fry all of this in oil. Pass the lard through a meat grinder, grind the resulting mass together with chopped greens and washed millet. Strain one and a half liters of broth from the total mass, and place the potatoes in it. It is recommended to cut the potatoes into cubes. Boil the potatoes for 10-15 minutes, then add the stewed cabbage, lard, all the spices and greens prepared in advance and cook until done. When serving, the dish should be cooled slightly and a piece of pork, sour cream and herbs should be placed on the plate.
Peasant soup
To make this soup, prepare the ingredients. So, cut the cabbage into small checkers, the potatoes into cubes, and the root vegetables into small circles. Put the broth to boil separately. After the broth boils, you can put the cabbage in it. Meanwhile, sauté the onion, carrot, parsley, tomato puree, or regular tomatoes separately. It is better to sauté in butter or lard. Let the cabbage boil, and add everything else - potatoes, sautéed vegetables. Boil for another 10-15 minutes, and at the very end you can add the roots, but do not use any spices. You can also use cereals, but then you need to reduce the amount of potatoes, or remove them altogether. The cereals need to be boiled separately until done, and added to the soup along with the vegetables. And millet is added at the very beginning of cooking. When serving, season the dish with sour cream and herbs.
Vegetable soups for pancreatitis, classic soup
You will need a variety of vegetables. They are usually cut into small pieces and boiled. The best option would be a soup that includes parsley, dill, carrots. Celery, parsnips, onions. They not only go well with each other, but also have excellent healing properties. This is a rare case in which it is possible to combine excellent taste with benefits, and even a health effect. You should not bring the vegetables to a state where they fall apart, just boil them slightly and add the potatoes. Let these ingredients boil, and in the meantime mix the sour cream with the egg yolks. Wait until the potatoes soften, and season the soup with the prepared mass. Boil for a few minutes, stirring constantly, and sprinkle with herbs. Serve with croutons.
Puree soup for pancreatitis
There is also more than one puree soup, there is quite a large variety of them. For example, you should try carrot soup with vegetables (potatoes, carrots, cabbage). To prepare it, you need to cut everything into small pieces, then mix all the ingredients and boil over medium heat until softened. Do not pour out the water in which the vegetables were boiled, but drain it, cool it a little. Then, using a sieve, rub it all and add the rest of the broth that was just drained (after cooling it first). Add aromatic substances, season with sour cream.
Cream of Tomato and Apple Soup
This soup cannot be made without carrots and onions. Prepare them in advance: cut into small slices, sauté a little. Use sunflower or butter for sautéing, and add spices and herbs to taste. It is recommended to use roots. The soup is quite tasty when seasoned with celery, parsnips, and parsley. After frying, add a small amount of flour, which is used to bind the ingredients and give them a fresh, toasted hue. Fry for about 2 minutes, pre-salting to taste. Then you can place all these ingredients in a saucepan, pour in the broth. Then bring the contents to a boil, then add the tomatoes and apples. They must be cut into small slices in advance and allowed to stand for a while. The apples must first be peeled, peeled, and seeds removed. Boil for at least 20-30 minutes. Then rub the mass. Let it all boil. Add a small amount of salt. After the soup is cooked, it can be served on individual plates. Usually, such soup requires a side dish. Any rice dish served on a separate plate, decorated with herbs and sauce, is suitable as a side dish.
Mucous soups for pancreatitis, mucous kulesh
Boil the millet 1-2 times (you should not throw it into cold water, but into boiling and salted water). It is also recommended to immediately add a few bay leaves for taste. About 10-15 minutes is enough for cooking. Usually this time is enough for the millet to become completely ready, boiled. Then mash it with a masher, spoon. Season the resulting mass with onion, pre-fried. Kulesh is also prepared on the basis of potatoes, then you need to reduce the amount of cereal.
Chicken soup for pancreatitis
It is prepared quite simply. There are many recipes and ways of preparing such soup. In addition, there is a wide scope for creativity here. In fact, the only condition is to add chicken to the soup. To prepare the soup, it is recommended to boil the chicken broth separately. You can use chicken with bones. Initially, cold water is used for pouring. Then the broth will be boiled and cooked while simultaneously heating the water and boiling the bloom. Accordingly, the possibility of saturating the water with nutritional components and fat from the chicken increases. Various extractive components also diffuse into the solution, which allow the broth to become rich, satisfying and nutritious. Cook for 40 minutes. During cooking, foam will form, which must be removed. The fact is that it accumulates all the toxins, decay products that form in the meat during cooking. After removing, you can continue cooking. You can additionally add a raw egg or onion, which will collect all the toxic products. The chicken should be tasted periodically: it should be cooked until it becomes soft and boiled. It takes an average of 3-4 hours to cook the bones. If the broth has not acquired the desired shade or transparency, you can add a draw, which will provide the broth with exactly these qualities. It is prepared separately: you need to finely chop the chicken bones, pour them. The water temperature should be low enough so that it heats up evenly during the cooking process. Then set aside, allow to cool, and then keep in the refrigerator for at least 2 hours. Allow to brew, after which the egg white is added, the dish is salted. After this, the draw can be considered ready for further use.
Now you can dilute it with warm broth, add fat-free broth, about 60 degrees. Mix the entire mixture well. During heating, foam will form, which must be periodically removed. Boil everything for about another hour on very low heat. Now you can strain the broth. And eat it with a side dish. As a side dish, you can use various dishes and snacks, for example, croutons, crackers, profiteroles, dumplings, manna.
Milk soup for pancreatitis
In case of pancreatitis, you can also use milk soup. It can be prepared in various ways, using different ingredients. Soup with potatoes, cereals, and pasta has proven itself well. Let's consider a method for preparing potato soup as an example. To do this, prepare the potatoes in advance, cut them into small pieces. Then place them in boiling milk. It is better to make the fire high. Bring to a boil, remembering to stir occasionally. Separately, melt the butter in a frying pan, add vegetables. This soup will go well with onions, carrots, and sweet peppers. Do not forget to salt the sauté and season with roots. Try the potatoes. If they are almost cooked, you can safely pour in the sauté you prepared. Boil for about 10 more minutes. To prepare dumplings, knead the dough from flour and eggs. Naturally, add salt and water, roll it all out into a thin layer, cut into small squares. After this, you can serve the dish, garnished with greens. It is better to use dill.
Vegetarian soup for pancreatitis, cold tarator soup
Prepared on the basis of kefir. You need to whip the kefir, crush the garlic with nuts. Mix thoroughly with salt. Beat butter into this mass, mix with kefir, continue whipping. When the mass is homogeneous and smooth, add chopped fresh vegetables. It is recommended to use cucumbers and various greens, for example, dill, parsley. Diluting with water, form a mass of the required thickness.
Mushroom soup
You can prepare such a soup by taking separately mushrooms in the amount of about 500 grams, and also about 100 grams of pearl barley. All this is carefully sorted, washed, after which you can start to cook in separate pans until done. When the pearl barley is ready, drain the water in which it was cooked, and add mushroom broth. Add pre-prepared sautéed vegetables. In this case, various root vegetables are well suited. Also cut potatoes into small pieces, mix with the main dish and cook until everything is ready and soft. Before removing from the heat, add mushrooms, cook for a couple more minutes.
Seaweed Soup
Peel the potatoes, cut them, fry the onions and carrots. Put the potatoes to boil. If they are almost ready, you can add the sautéed mixture you have prepared. Put it all on low heat and continue to cook. After about 5 minutes, you can season it with seaweed and green peas and cook for another 15 minutes. After that, the dish is ready. To give it aesthetic and taste qualities, you need to sprinkle some herbs on top before serving.
Fish soup for pancreatitis, Scottish soup
Take any fish (preferably sea fish), clean it, separate it from the bones. The fish must be cut, washed thoroughly, sorted, cut. Put it on the fire, placing it in cold water. Separately put the pearl barley on the fire, boil it, then leave it for about an hour. Drain the liquid, put it in the same pan where the prepared fish and broth are already placed. Boil it for about an hour over low heat. Then season the dish with vegetables: onions, herbs, carrots, which are recommended to be additionally fried in oil. Rutabaga and herbs are often added. All this is boiled - and the dish is ready.

Pumpkin soup for pancreatitis
Cut the pumpkin into small pieces. Boil the broth separately. Meat, bones, and fish are ideal for its preparation. It would be good to add peas. Boil for about 10 minutes, then add the pumpkin and boil for another 10 minutes. Prepare the sauce separately. To do this, boil the mixture and add a small amount of vinegar. Beat the eggs and boil it all. Eat hot.
Mushroom soup for pancreatitis, mushroom rassolnik
Place a spoonful of vegetable oil and onion, cut into very small pieces, directly on the bottom of the pan. Fry a little, then add some mushrooms. In order for the dish to be tasty and safe, it is advisable to prepare the mushrooms in advance: sort them out, wash them thoroughly, cut out any excess or spoiled parts. Cut them into very small pieces and place them in water for about an hour. This will allow all the toxins and harmful substances that usually fill the inner, spongy tissue of the mushroom to come out. In this way, you reduce the risk of poisoning to a minimum, since mushrooms are considered a rather dangerous product. Preference should be given to porcini mushrooms, since days are the most suitable variety. They have the most valuable and nutritious protein and do not accumulate toxins. In addition, they are easiest to recognize and distinguish from toadstools. Before placing them in a pan with soup, fry them, pour boiling water over them, then cover and boil. When the mushrooms are cooked enough (they are half-ready), add carrots, roots, pearl barley. Also finely chop the pickles, boil. Before serving, garnish with finely chopped greens.
Buckwheat soup for pancreatitis
Separately prepare the broth (you can use any). Most housewives and experienced cooks opt for broth made from meat, mushrooms or fish. Offal and giblets are also often used. Having prepared the broth, add about 100 grams of buckwheat. Instead of spices, you can use herbs and roots. They give a wonderful taste and aroma without reducing the nutritional value. Moreover, they form useful healing properties that stimulate the pancreas, as well as the glands involved in the digestion process. Season the fully cooked dish with carrot and onion ingredients sautéed in sunflower oil. You can also cook with potatoes, but then the amount of cereal should be half as much.
Strained soups for pancreatitis
You will need various roots. There is quite a large variety of them on the market, so choose any. All roots based on plant extracts that have a positive effect on the digestive system will be useful. We cut them separately and start sautéing. Chop the onion and carrot, sauté over low heat. Boil the potatoes and vegetables, then mix with the sautéing. Place the washed and chopped sorrel leaves. Before serving, rub the thick part with a fork.

Onion soup for pancreatitis
About 200 grams of chicken bones are poured with a liter of liquid. This can be either regular water or a pre-prepared broth.
Boil, then add onion and roots (there should be quite a lot: at least 5-6 large onions). When the onion is completely ready, the dish can be considered ready to eat. When serving, cool slightly and release the egg yolk, carefully separated from the white. Sprinkle with herbs on top.
Rice soup for pancreatitis
You can try to make kharcho soup, which is slightly different from what we are used to. If it is usually very spicy, then for pancreatitis it is prepared according to the same recipe, only pepper is excluded. The result is a mild kharcho. This does not make it any less tasty. For cooking, it is recommended to chop the brisket and place it in water. After preliminary cooking, add the pre-prepared rice (it should be kept in water for about an hour). Sauté the onion, crushed garlic, and tomato. Cook until everything is completely ready. When serving, place the meat in each bowl. Also sprinkle with herbs on top (it is better to use dry ones).
Meatball soup for pancreatitis
Prepare the meatballs and the soup separately. To prepare the meatballs, you will need minced meat, egg, and onion. Mix the minced meat with the egg, add salt. Form the cutlet mass. Prepare the sauté separately: fry the onion with tomato paste. Put the cutlet mass into this mixture.
Separately prepare the soup base, which will include potatoes, onions, sweet peppers and 1.5 liters of pre-prepared broth, chopped celery stalk.
Cauliflower Soup for Pancreatitis
Peel and mash the potatoes and cauliflower until pureed. Then fry the bacon separately. You can use onions and carrots for frying. Mix everything, stir thoroughly. After the mixture boils, add the vegetables we previously mashed. Boil for about 5 more minutes, then pour. Place grated cheese and sour cream on each portion, stir.

Cheese soup for pancreatitis
It is necessary to boil the cheese in water or broth. Boil it all for about 5 minutes, cool. Separately prepare the cucumbers (cut them). Pour the prepared mixture over it. Add chopped onion, sour cream.

Potato soup for pancreatitis
You need to prepare and boil the potatoes, then pass them through a sieve. The mashed potatoes that remain after boiling need to be diluted with the broth in which the dish was boiled and milk. Milk soup with potatoes and vegetables
