The word "diet" implies certain rules for the consumption of food: culinary processing, the physico-chemical properties of foods, the frequency of food and the intervals between them. Diet can be rational and therapeutic. The first provides a normal diet for a healthy person, containing nutrients essential for vital activity, based on a scientifically based system that takes into account age, sex, and race. Each of them corresponds to a dietary table with a certain set of products and a way of preparing dishes, designed to help in overcoming pathology. Diet №1 and, accordingly, dietary table №1 is intended for people with diseases of the gastrointestinal tract.

People with various problems of the digestive system experience many torments, satisfying the basic need of the body for food. Any snack or a full dinner recall pain, heartburn, weight in the epigastric region, an unpleasant eructation. At these moments comes the understanding of the need to change something in your diet, switch to a sparing food, excluding the negative effect on the mucous membrane of the stomach and duodenum. Diet № 1 is indicated for the purpose of:
- gastritis - in case of extinction exacerbation, at the stage of recovery, chronic gastritis with normal and high acidity, with secretory insufficiency at the peak of exacerbation, diseases of the esophagus;
- stomach ulcer and duodenal ulcer - during recovery and remission;
- gastroduodenitis - in combination with diet number 5;

General information of the diet number 1
In order to satisfy the set goals, the food should be in the temperature range of 15-60 0 С, do not contain a hard to digest rough structure, do not stimulate the production of hydrochloric acid. The essence of diet number 1 is that the dishes were crushed, mashed, puree and mush. Entire pieces of meat and fish are allowed, but boiled, steam, baked without cartilage, skin or crust. Vegetables, fruits, rich in fiber, are reduced to a minimum. Diet № 1 recipes
Prepared food, related to diet number 1, is not only useful, but also quite tasty, if you use good recipes for their preparation.
- First meal:
Are prepared not only on the water, but with a chronic course of the disease and the absence of exacerbations on meat unsaturated broths from low-fat varieties of meat. The advantage is veal, rabbit, turkey, chicken. As a rule, secondary broths are used. Beef, prepared as follows:
- meat is cut from the bone, cleaned of films and tendons, cut into small pieces, poured in water and cooked for 30 minutes. Then the broth merges, the meat is washed, water, a bulb, a carrot, a celery root, parsley and is cooked as much as after boiling. Salads with diet number 1 also have the right to be present on the table, but with certain restrictions. They can include ingredients such as fish, meat, tongue in boiled form, cooked sausage of premium quality, faint cheese, boiled vegetables.

What foods are recommended for the dietary table number 1 and what can be eaten? Let's name the basic elements of the food that make up the menu:
- bread and bakery products - wheat, yesterday's pastries or dried, buns, biscuits like "Maria";
- eggs - omelet for steaming or boiled soft-boiled, but not more than 2 pieces per day;
- porridge - semi-viscous on water or low-fat milk: oats, semolina, rice, grated buckwheat;

There is a definite ban on the use of certain foods in this diet. If the diagnosis is made by a doctor and a diet is prescribed, the risks associated with diet No. 1 are minimal. It should be remembered that a diet can not last forever, because in it there are certain disproportions in the ratio of protein-fat-carbohydrates towards the increase of the latter, designed to help the body get out of the pathological state. The average duration of the diet is 3-5 months, depending on the severity of the disease.
