The word "diet" implies certain rules of food consumption: cooking, physical and chemical properties of products, frequency of meals and intervals between them. Diet can be rational and therapeutic. The first provides normal nutrition for a healthy person, containing necessary and irreplaceable nutrients for life, based on a scientifically sound system that takes into account age, gender, race. The therapeutic diet provides nutrition for various diseases and has a number system. Each of them has its own dietary table with a certain set of products and cooking method, designed to help overcome the pathology. Diet No. 1 and, accordingly, dietary table No. 1 is intended for people with diseases of the gastrointestinal tract.

Indications

People with various digestive problems experience a lot of torment, satisfying the body's basic need for food. Any snack or a full meal is accompanied by pain, heartburn, heaviness in the epigastric region, unpleasant belching. At these moments, an understanding comes of the need to change something in your diet, switch to gentle food that excludes a negative impact on the mucous membrane of the stomach and duodenum. Diet No. 1 is indicated for:

  • gastritis - in case of attenuation of exacerbation, at the stage of recovery, chronic gastritis with normal and high acidity, with secretory insufficiency at the peak of exacerbation, diseases of the esophagus;
  • gastric ulcer and duodenal ulcer - during recovery and remission;
  • gastroduodenitis - in combination with diet No. 5;
  • pancreatitis - the pathology requires absolute fasting for the first 3-5 days, only drinking, then the gradual inclusion of individual dishes from diet No. 1 (pureed soups on water without the use of broths, vegetable purees, milk porridges);
  • after removal of gastric polyps - any surgical operations on the organ require dietary table No. 1 on the 7-8th day after the operation.

General information of diet No. 1

To meet the set goals, food should be in the temperature range of 15-60 0 C, not contain a hard-to-digest coarse structure, not stimulate the production of hydrochloric acid. The essence of diet No. 1 is that the dishes should be chopped, mashed, pureed and mushy. Whole pieces of meat and fish are allowed, but boiled, steamed, baked without cartilage, skin or crust. Vegetables, fruits rich in fiber, are reduced to a minimum. This applies to white cabbage, legumes, radishes, radishes, hard fruits with thick skin, etc. It is necessary to avoid eating unripe fruits and berries, eat less coarse bread. The diet involves fractional meals, divided into 5-6 meals with maximum intervals of 4 hours, with the last meal (a glass of milk or low-fat cream) an hour and a half before bedtime.

  • Thursday.

1st: steamed omelette, rice porridge with milk, tea;

2nd: biscuit with milk;

3rd: cream soup with chicken broth and rice, meat soufflé, sweet fruit juice;

4th: baked pear with sugar;

5th: cauliflower puree, skinless chicken;

6th: cream.

  • Friday.

1st: milk soup with vermicelli, cottage cheese pudding, herbal tea;

2nd: fruit jelly;

3rd: vegetarian soup, steamed dumplings with buckwheat, dried fruit compote;

4th: cookies, rosehip decoction;

6th: cream.

Menu for every day of diet No. 1A

Day 1:

  • Breakfast: Homogenized low-fat yogurt.
  • Afternoon snack: Low-fat milk puree with rice porridge.
  • Lunch: Chicken broth (no meat or vegetables).
  • Afternoon snack: Liquid yogurt.
  • Dinner: Milk rice soup without oil.

Day 2:

  • Breakfast: Homogenized low-fat yogurt.
  • Afternoon snack: Low-fat milk puree with rolled oats.
  • Lunch: Fish broth (no meat or vegetables).

Diet recipes #1

Prepared food related to diet No. 1 is not only healthy, but also quite tasty if you use good recipes for their preparation.

  1. First courses:

They are prepared not only on water, but in case of chronic course of the disease and absence of exacerbations on meat unsaturated broths from lean meats. Veal, rabbit, turkey, chicken have an advantage. Secondary broths are usually used. Beef broth is also allowed, prepared as follows:

  • the meat is cut off the bone, cleaned of films and tendons, cut into small pieces, filled with water and boiled for 30 minutes. Then the broth is drained, the meat is washed, water, onion, carrot, celery root, parsley are added and cooked for the same amount of time after boiling. The result is a fragrant broth, to which potatoes, cereals, meatballs, dumplings, other vegetables are added at will, depending on what kind of soup they want to cook.
  1. Main course recipes:
  • turkey fillet, mince the onion, combine with a few spoons of sour cream, egg, add a little salt, form meatballs, steam;
  • Boil lean sea fish in water until done, remove, wrap in foil, pour milk sauce over it beforehand, and bake.

Salads in diet No. 1 also have the right to be present on the table, but with certain restrictions. They can include such ingredients as fish, meat, boiled tongue, boiled premium sausage, mild cheese, boiled vegetables.

  1. Salad recipes:
  • grate the beets, add soft cheese like mozzarella, season with vegetable oil;

There is a certain ban on the use of certain food products within the framework of this diet. First of all, these include non-dietary ones that can irritate the mucous membranes and increase the acidity of the stomach: canned food, smoked foods, carbonated drinks, coffee, strong tea, sour juices, strong meat and fish broths. What else can't you eat? The following are excluded:

  • rye bread, fresh wheat bread, baked goods, pancakes, pies;
  • fatty, sinewy meat and poultry, canned food, cooking methods such as frying, stewing;
  • fatty fish, fried, smoked, salted, stewed;
  • raw egg whites, fried and hard-boiled;
  • sharp hard cheeses and sour dairy products;
  • barley, millet, buckwheat, pearl barley;
  • canned, pickled, fermented vegetables and mushrooms;
  • rich, strong broths, borscht, okroshka.

Contraindications

Diet No. 1 is contraindicated for patients with low stomach acidity, during exacerbation of peptic ulcer disease, gastritis, colitis, in the first days after surgery of the gastrointestinal tract.

Possible risks

If the diagnosis is made by a doctor and the diet is prescribed by him, then the risks associated with diet No. 1 are minimal. It should be remembered that the diet cannot last forever, since it has certain imbalances in the protein-fats-carbohydrates ratio towards an increase in the latter, designed to help the body get out of the pathological state.
