Digestion of fats, carbohydrates, and proteins from food is possible only in the presence of enzymes contained in pancreatic juice produced by the pancreas. Can you eat baked goods if you have pancreatitis?

Nutrition in pancreatitis is the basis of treatment of the disease. [ 1 ] ], [ 2 ] After exiting its acute stage, when it is important to endure several days of complete fasting, mashed porridges on water and vegetarian soups are carefully introduced. [ 3 ], [ 4 ] Diet table No. 5p is prescribed only at the stage of remission and includes the preparation of food products by baking them in the oven and microwave. [ 5 ]

What healthy dishes can you get this way? Here are some:

  • baked apples for pancreatitis - fresh fruits stimulate the secretion of gastric and pancreatic juice, which is completely unacceptable for pancreatitis. Refusing them is also not an option, since they are rich in pectins, organic acids, tannins, folic acid, other vitamins (A, C, E, PP, P, group B), iron, magnesium, potassium, calcium, zinc, aluminum, iodine, etc. that are so necessary for the body. [ 6 ]

Baking apples does not greatly reduce their beneficial properties, but increases their digestibility, turning the fruit into a delicious dessert. They are recommended to be included in the diet after operations, with intestinal dysbacteriosis, gastritis and stomach ulcers;

  • baked onions for pancreatitis - housewives consider it unthinkable to cook without onions. They add it to salads, sauces, first courses, and use it in meat and fish recipes.

The benefits of onions are beyond doubt, but the essential oils they contain are very aggressive, they make us cry when we cut them. [ 7 ] They behave in exactly the same way when they get on the gastric mucosa. In its raw form, the vegetable is definitely harmful for pancreatitis. Only a long-term stable condition allows it to be consumed in limited quantities sometimes.

A baked product is a different matter. It has a softer and more delicate effect on the pancreas and the entire digestive tract, saturating the body with vitamins A and C, nourishing the myocardium with potassium, protecting against pathogens and viruses, and reducing blood glucose levels;

  • baked pumpkin for pancreatitis - the uniqueness of this product is in the richest vitamin-mineral complex: champion of iron among vegetables, a source of valuable vegetable proteins, rare vitamin T, pectins, amino acids, fructose, glucose and many other useful substances. [ 8 ]

When baked, the fruit will not only satisfy gastronomic tastes, saturate the body with essential chemical components, but also strengthen the immune and nervous systems, remove toxins and waste, increase potency in men, improve bowel function, improve sleep and vision, activate memory, and reduce the risk of developing atherosclerosis and hypertension. [ 9 ] If pancreatitis is aggravated by diabetes or low stomach acidity, then, unfortunately, the orange fruit is contraindicated;

  • baked potatoes for pancreatitis - potatoes are a neutral product in terms of taste, do not contain essential oils and acids that irritate the mucous membrane, there is not much fiber and it is soft. [ 10 ]

In addition, the fruit contains easily digestible protein, almost all the B vitamins, as well as C, E, H. Among the microelements, iodine, potassium, cobalt, magnesium, and copper are valuable. Potassium has a beneficial effect on the activity of the heart muscle, and it is found mostly in the potato peel. Baking allows you to eat the vegetable directly with the peel, which has been thoroughly washed beforehand.

This method of cooking preserves all the useful properties as much as possible. It is recommended not only for pancreatitis, but also for gastritis, gastroduodenitis, because it does not leave a feeling of heaviness in the stomach, does not cause bloating, and is low-calorie. In addition, potatoes are our second bread, which we cannot do without, so it is best to cook them in such a way that they not only fill you up, but also bring benefits.
