Cranberry is not only a mini-pharmacy on the table, but also the basis for preparing various dishes and drinks. For example, a housewife can please her loved ones with fruit drinks and compotes, kissels and teas, kvass and freshly prepared juice.
Fresh cranberries, mashed with sugar or honey, are good as a winter preparation. From the northern beauty, you can prepare not only an independent dish that can be rolled up in jars and placed in the refrigerator for storage. There are many recipes in which cranberries are mixed with healthy fruits, such as apples, oranges and lemons. - then the cranberries are poured into a sieve to allow excess protein to drain;
- after which a dry cutting board is taken, sugared cranberries are poured onto it and evenly distributed over the entire surface;
- some of the berries are placed on a board and each berry is rolled with fingers so that they are evenly covered with powder;
- the same procedure must be done with all the berries, after which they must be placed in bowls or creamers;
- The dessert is stored in the refrigerator.
Cranberry Pie
If you want to treat your family with some simple but unusual pastry, cranberry pie is a suitable candidate for a family dinner. There are several recipes for this delicious pie. Here are some of them.
Recipe No. 1.
Ingredients:
- butter or margarine – one pack (one hundred eighty – two hundred grams),
- eggs - three pieces,
- flour - two glasses,
- fresh or frozen cranberries – three hundred grams,
- sugar - three glasses,
- starch – one or two tablespoons.
Preparation:
- a pack of butter or margarine is cut into small pieces,
- then we take the eggs and separate the yolks from the whites, and hide the whites in the refrigerator,
- beat the yolks together with two tablespoons of sugar,
- then the yolks are mixed with butter (or margarine) and flour is added to the mixture,
- after which everything is thoroughly mixed and a lump is formed,
- the baking pan needs to be greased with butter and a lump of dough needs to be placed in it,
- the dough is spread over the bottom with your fingers and a small border is made along the edge, it is pierced in two or three places and placed in the oven,
- for the filling you need to take the cranberries and mash them with a potato masher,
- after which two glasses of sugar are added to the berry mass and everything is thoroughly mixed,
- to make the filling thicker, starch is added to it,
- after the dough has acquired a pleasant yellow color, after about twenty to twenty-five minutes, it needs to be taken out of the oven,
- then the filling is placed on it,
- the whites are taken out of the refrigerator and beaten with one glass of sugar until the consistency of “snow”,
- then the cranberries are covered with egg whites, and the pie is placed in the oven for five minutes until the egg whites acquire a color called “coffee with milk.”
Recipe No. 2.
Ingredients:
- cranberries - two glasses,
- chopped walnuts - half a glass,
- sugar - one glass,
- eggs - two pieces,
- softened butter – one hundred grams,
- flour - one glass.
Preparation:
- take a baking dish and grease it with butter,
- after which the oven is heated to one hundred and eighty degrees,
- cranberries and nuts are placed in the mold and sprinkled with half a glass of sugar,
- then in a bowl mix the flour, remaining sugar, butter and eggs,
- the dough is poured onto the cranberries and placed in the oven,
- The baking time for the pie is from forty to fifty minutes.
Cranberry and Sour Cream Pie
There is another way to make cranberry pie - using sour cream. Cranberry and sour cream pie is a simple pastry made from shortcrust pastry, which is very tasty.
Recipe for cranberry and sour cream pie.
Ingredients:
- butter - one hundred and fifty grams,
- sugar - one hundred and fifty grams,
- flour - three hundred and fifty grams,
- eggs - two pieces,
- low-fat sour cream – five hundred milliliters,
- potato starch - one tablespoon,
- fresh cranberries - three hundred grams,
- soda - one teaspoon.
Preparation:
- cranberries are washed and dried;
- the flour is sifted and left for some time;
- the prepared amount of butter softens;
- the oven heats up to a temperature of one hundred and sixty degrees;
- after which the butter is ground to a homogeneous mass together with 50 grams of sugar;
- eggs are added to the mixture, then soda is added;
- at the very end, flour is added to the mixture and a homogeneous shortcrust pastry is kneaded;
- the baking pan is greased with butter;
- after which shortcrust pastry is placed there and distributed in an even layer along the bottom of the pan; it is also necessary to make sides;
- prepared cranberries are placed on the dough;
- after which the berries are sprinkled with 50 grams of sugar;
- sour cream is mixed with the remaining sugar and starch until a homogeneous consistency is achieved;
- the sour cream mixture is spread over the cranberries and the pan is placed in the oven;
- The pie is baked for approximately twenty to twenty-five minutes.
Cranberries with apples
Cranberries with apples are a tasty and healthy dessert. And at the same time, this delicacy is easy to prepare and easy to store.
Take one part cranberries, one part apples and two parts granulated sugar. For example, if there is half a kilogram of cranberries, then there should be the same amount of apples. Together, the berry and fruit ingredients will be one kilogram. You need to take two kilograms of sugar for the prepared fruits.
Apples need to be peeled and grated using a fine grater. Cranberries need to be mashed using a wooden pestle and rubbed through a colander (or sieve) to separate the skin from the pulp. The berry skin should not be thrown away, it can later be used as a component of a vitamin drink with rosehip infusion and honey.
Cranberries are mixed with apples, and sugar is added to the resulting mass. Everything is thoroughly mixed with a wooden spoon and left in a warm place for a while to allow the sugar to dissolve. After that, the vitamin mixture is laid out in small glass jars and stored in the refrigerator.
Cranberry jam
In the winter cold and frost, you will want to treat yourself to something tasty, but at the same time, healthy. To strengthen the immune system and not catch a cold. Cranberry jam will come to the rescue, which has an interesting taste and a lot of advantages as a medicine.
So, here is a recipe for simple and quick-to-make jam. This technology was borrowed from Swedish cooks. It has a lot of advantages:
- The berries are first boiled by themselves, releasing juice, without adding sugar, for about twenty minutes. After that, sugar is added to the cranberry "brew".
This allows the berry to retain its fresh and original taste, as well as a large number of useful substances. The jam also has an amazing bright color, which will please color gourmets at the table.
- Since the sugar is added at the end, much less is needed than with the usual technology of making cranberry jam. Approximately sixty percent of the weight of the cranberry, and if the berry is very sour, then eighty.
To make jam, you need a saucepan with a thick bottom and a fairly wide diameter. An important reminder is that the berries need to be placed in a layer of no more than three centimeters. In this case, the cranberry mass will be properly soaked in its own juice and prepared for storage.

- fresh or frozen cranberries - one kilogram,
- sugar - six hundred grams.
Preparation:
- cranberries are sorted and washed,
- the berries are placed in a prepared pan and placed on high heat,
- as a result, the cranberries will begin to release juice, and when it boils, the heat must be reduced to low (which is close to medium),
- the pan is covered with a lid and left for ten minutes (it is necessary to note the time),
- after the specified period of time, the cranberry mass is stirred and left under the lid for another five to ten minutes,
- then the pan is removed from the heat and sugar is gradually added, which is mixed into the cranberry mass with a wooden spoon,
- stirring must be continued until the sugar has completely dissolved; while doing so, you must be careful not to damage the integrity of the berries,
- cranberry jam is cooled to room temperature, poured into jars and covered with plastic lids,
- The jam can be stored outside the refrigerator; if there is only a little of it, then the sweet dessert can be eaten quickly, and then a new portion of cranberry mass can be prepared,
- If the jam is prepared for future use, it should be poured into sterilized jars, covered with a lid and stored in the refrigerator.
Cranberries with honey
Cranberries with honey are not only a healthy but also a tasty dish. Crushed cranberries mixed with honey help to cope with colds, coughs, bronchitis, improve immunity and improve metabolism in the body.
Cranberries with honey are a winter preparation that can be stored throughout the year, practically without losing its healing properties. Cranberries with honey are prepared simply and quickly. The berries are washed and dried, and then twisted using a meat grinder or crushed in a blender. Cranberry puree is combined with honey in a one-to-one ratio. This potion is taken one to two tablespoons two hours after eating. To strengthen the body, this procedure should be carried out five to six times a day for a month.
Cranberry Cookies
Cranberry cookies are a great dessert for a family tea party or a get-together with friends. The ingredients for making cookies include 300 grams of wheat flour, 150 grams of corn flour, two eggs, 150 grams of sugar, 70 grams of dried cranberries, 150 grams of butter, one orange, five grams of vanilla sugar, five grams of baking powder, and a pinch of salt.
In a prepared container, mix wheat and corn flour, salt and baking powder. In a separate bowl, beat soft butter and sugar for at least four minutes. After that, the beaten mixture is thoroughly mixed, and eggs are added there. After adding each egg, the butter mixture is beaten with a mixer, and another egg is added there.
After this, the mixtures from the two containers must be combined and thoroughly mixed. The zest of one orange and cranberries are added to the dough, and then the mass is thoroughly mixed. The dough must be given a cylindrical shape and wrapped in cellophane, then the cylinder is hidden in the freezer for one hour. After the specified period, the dough is taken out of the freezer, the cellophane is unwrapped, and the workpiece is cut into circles. The diameter of the circles should be approximately one centimeter.
The baking tray is covered with parchment paper and the cookie blanks are placed on it. The oven is heated to one hundred and eighty degrees, where the baking tray is then placed. The cookies are baked for fourteen minutes until their color becomes golden. After which the baking tray is removed from the oven, the cookies are cooled on it for about five minutes, and then transferred to a rack and finally cooled there.
Cranberry Cupcake
To make a delicious cranberry cake for six people, you need to take two hundred grams of flour, one hundred twenty grams of sugar, one hundred twenty grams of butter, three eggs, one hundred fifty grams of cranberries, fifteen grams of vanilla sugar, two apples and five grams of baking powder.
The butter is left on the table until it softens, after which it is whipped until fluffy. Then sugar is added to the butter and everything is whipped thoroughly again.
Beat one egg into the butter mixture and mix the mass. Separate the whites from the yolks of the remaining eggs and add to the dough. Add flour and baking powder, and mix the dough thoroughly until smooth.
The cranberries are washed and dried, and then added to the bowl with the dough. This time, the dough needs to be mixed carefully so that the berries remain whole. The baking pan is greased with butter and the dough is placed there. The apples are peeled and cut into slices, and then rolled in vanilla sugar. The prepared fruit slices are placed on the cake, and the remaining sugar is poured on top of the apple pieces.
The oven is heated to one hundred and eighty degrees. The cake is placed in the oven and baked until it becomes golden. This happens approximately an hour after the start of baking.
Cranberry jelly
Cranberry jelly can be prepared as an autumn dessert, which can be served immediately with tea. It is also good to use jelly as a winter preparation to treat yourself and your loved ones with something tasty during the winter cold.
To prepare the jelly, you will need half a kilogram of cranberries, two hundred and fifty grams of water and two glasses of sugar. The berries are sorted and washed, then placed in an enamel saucepan and filled with water. The container is covered with a lid, put on the fire and cooked until the berries become soft. Then the water is drained and the juice is squeezed out of the berries. Sugar is added to the liquid, after which everything must be thoroughly mixed. The saucepan is placed on low heat, and the contents of the dish must be constantly stirred until the entire mixture reaches the state of jelly. Then the prepared hot jelly must be poured into sterilized jars and rolled up with boiled lids. The jars are cooled at room temperature and stored in the pantry.
Cranberry Muffins
Muffins are a type of pastry of a round or oval shape, into which various fillings are placed. In our culture, muffins are cupcakes into which you can put chocolate chips, various berries and fruits, pumpkin and carrots, nuts and cinnamon.
To prepare muffins you will need two hundred grams of wheat flour, one teaspoon of baking powder, half a glass of oatmeal, eighty grams of brown sugar, a pinch of salt, two hundred ml of milk, two chicken eggs, sixty-five grams of butter, fifty grams of natural yogurt, two hundred grams of frozen cranberries, two teaspoons of lemon zest, half a glass of crushed walnuts, a little spice - ginger, cloves and nutmeg, four tablespoons of lemon juice, two tablespoons of honey, two tablespoons of powdered sugar.
The cranberries are defrosted and the resulting juice is drained. The butter is melted using a water bath. The flour, oatmeal, sugar and salt are mixed. In another bowl, the eggs are beaten with milk, yogurt and melted butter are added. After that, the mixtures from the two containers must be combined together. The cranberries, lemon zest, nuts and spices are carefully mixed into the resulting mass. The dough is poured into muffin tins, filling them two-thirds full. The muffins are baked at an oven temperature preheated to one hundred and ninety degrees. The baking time is twenty-five minutes.
After the muffins have been removed from the oven and left to cool, you need to prepare the glaze. To do this, mix lemon juice and honey, heat everything up and add powdered sugar. Bring the mixture to a boil, cool slightly, and then spread it over the cooled muffins.
Cranberry with orange
Among the home-made preparations that housewives can please their loved ones with, there is such a recipe as cranberry with orange. This is an original and tasty dish that has an unforgettable aroma and unusual color.
This delicacy is full of vitamins that can support immunity during the cold winter months. Cranberry with orange is easy to prepare, and the pleasure is incredible. It is good as a jam, which can be spread on a bun, and as an additive to tea, and as a filling for sweet porridge. You can also use cranberry with orange as an ingredient in any dessert.
Recipe for cranberries with orange. Take fresh cranberries - two kilograms eight hundred grams, oranges - five pieces, lemons - three pieces, sugar - three and a half or four kilograms.
Oranges and lemons are washed and cut together with the zest. The pieces should be quite large. The seeds should be removed, and the fruit should be ground in a meat grinder. Cranberries are washed and dried, after which they are mixed with the citrus mass. After which everything is minced again, twice.
Then sugar is added to the fruit and berry mixture in a one to one ratio. Then everything is mixed well, put into sterile jars and covered with lids. The mixture is stored in the refrigerator.
Cottage cheese with cranberries
Sometimes you want to treat yourself to some cottage cheese, but not in a simple combination: cottage cheese - sugar - sour cream, but with something unusual. Cottage cheese with cranberries, just right, will be that original fermented milk dish that will appeal to gourmets.
Cottage cheese with cranberries is very easy to prepare. Add the required amount of sugar (to taste) and sour cream to a portion of cottage cheese. Mix everything thoroughly, you can even whip the mixture in a blender. Then you will get a delicious cottage cheese dessert. At the very end of cooking, cranberries are added to the mixture, which must first be washed and sorted.
There is another recipe for using cranberries together with cottage cheese - this is a cottage cheese casserole. This delicious dish is prepared as follows.
Recipe for cottage cheese casserole
Take half a kilogram of cottage cheese, three eggs, three tablespoons of sugar, five tablespoons of semolina, one teaspoon of vanillin and one tablespoon of cranberries.
To prepare the casserole, the egg whites are separated from the yolks. Then the whites are whipped together with salt using a mixer until a good consistency. The yolks, cottage cheese, sugar, semolina and vanilla are ground together until a thick, homogeneous mass is obtained.
The cranberries are washed and dried, and then added to the curd mixture. After which the whipped egg whites are carefully added to the dough. The dough is then placed in a baking pan, which has been previously greased with butter. The pan is placed in the oven, which has been preheated to a temperature of one hundred and eighty degrees, and left there for forty-five minutes until the casserole is fully cooked.
Cranberry jam
In the autumn-winter period there is such a lack of sun, warmth and vitamins! A small joy at this time will be bright in color and pleasant to taste cranberry jam.
To prepare a healthy dessert, you need to stock up on glass jars with lids. It is better that they are small, for example, half-liter. Before preparing the jam, the containers are washed and sterilized.
Cranberry jam recipe.
Ingredients:
- fresh or frozen cranberries – three and a half cups,
- granulated sugar - one glass,
- freshly squeezed orange juice - half a glass,
- water - one glass,
- cinnamon - a pinch.
Preparation:
- the berries are washed and cleaned of impurities,
- all the jam ingredients are placed in a saucepan or a thick-bottomed pan,
- the dishes are placed on the stove and brought to a boil,
- after which the mixture must be simmered over high heat for twenty minutes,
- then the heat is reduced to low and the container is covered with a lid, after which the cranberry jam is stewed for an hour,
- after which the jam is removed from the heat and placed in a blender, where it is whipped until pureed,
- at the very end the jam is poured into a prepared jar,
- The recommended amount of ingredients makes approximately three hundred milliliters of dessert.
Salad with cranberries
There are a sufficient number of recipes for salads with cranberries: both vegetable and fruit. Salad with cranberries is always an unusual dish with an interesting taste. We will give one recipe for vegetable and fruit salad with the addition of the northern berry.
Recipe No. 1 - pumpkin, cranberry and seaweed salad.
To prepare the salad you will need one hundred and ten grams of cranberries, two hundred and forty grams of seaweed, one hundred and seventy-five grams of pumpkin, a little dill, salt and spices to taste.
The pumpkin is cut into cubes, the seaweed is chopped, and the dill is torn into small pieces. The berries are mashed with a mortar. All ingredients are mixed, spices and salt are added to them, if necessary. The salad is cooled before serving.
Recipe No. 2 – fruit and berry salad.
You will need to take two and a half tablespoons of cranberries, four hundred twenty-five grams of apricots, half a glass of walnuts, two tablespoons of orange zest, sugar, and a third of a glass of cranberry juice.
Apricots must be washed, dried, pitted and sliced. Nuts are ground in a blender, as is orange zest. Cranberry juice is mixed with sugar. All ingredients are mixed and seasoned with sweet cranberry juice.
Cabbage with cranberries
Such a traditional Slavic dish as sauerkraut is in constant demand in the autumn-winter period. You can diversify the preparation of this dish with various unusual ingredients, for example, cranberries.
Cabbage with cranberries is not only healthy, but also delicious. Here is a simple recipe for making sauerkraut with cranberries, which will undoubtedly please housewives and their households.
You will need to take two kilograms of cabbage, one large carrot, one hundred and fifty grams of cranberries, four tablespoons of salt, two tablespoons of sugar, three bay leaves.
The cranberries are washed and dried, the cabbage is shredded, and the carrots are grated. The shredded cabbage is mixed with the grated carrots and pressed a little so that the vegetables release juice. Sugar and salt are added there.
A third of the cabbage is placed in an enamel pan, tamped down, one bay leaf and a third of the berries are placed on top. After which two layers are repeated in this manner. A plate is placed on the prepared cabbage, and a weight is placed on it, for example, a three-liter jar of water. The container is left in the kitchen at room temperature for five to six days. When foam appears on top of the cabbage, it is necessary to pierce it to the bottom with a wooden stick in several places.
Cranberry sauce
Cranberry sauce is a dressing for meat and pastry dishes, which has a sweet and sour taste. In North American countries, cranberry sauce is used as a component of turkey dishes, and in British traditions - for poultry dishes, such as chicken. The cuisine of some countries uses cranberry sauce as an addition to cottage cheese and cheese dishes.
Cranberry Sauce Recipe
You need to stock up on three glasses of cranberries, the zest of one orange, a glass of sugar, half a glass of orange juice (freshly prepared), and half a glass of wine.
All ingredients are placed in a deep enamel saucepan and mixed. Then the mixture is placed on the fire and brought to a boil. Then the heat should be reduced so that the liquid boils with minimal bubbling. In this state, the cranberries are boiled until the berries burst. When the juice from the berries appears and the liquid itself becomes thick, the heat should be turned off and the container removed from the stove. The sauce is cooled slightly and thoroughly mixed with a blender. After cooking, the sauce is poured into a glass container, which is placed in the refrigerator when cooled. Cranberry sauce can be used for a long time, since this preparation can be stored for a long time perfectly.
