Even a completely healthy person can develop pancreatitis - for example, after an infectious disease, poisoning, or due to liver dysfunction. The disease can proceed with periodic exacerbations and stages of remission. Today we will talk about what the diet should be during an exacerbation of pancreatitis.

Pancreatitis is a very common disease that is often a consequence of poor nutrition, overeating, and excessive alcohol consumption.

Diet during exacerbation of pancreatitis

When do you have to change your diet? Most often, we think about it when something is wrong with our body: excess weight, metabolic disorders, chronic diseases. Diet during an exacerbation of pancreatitis is simply necessary, because without it, it is almost impossible to cure the disease.

When pancreatitis develops, the diet is prescribed for at least 1 year. During this period of time, the patient gives his digestive system the opportunity to recover and adjust to normal operation.

As for the acute period of the disease itself, in the first two or three days of exacerbation, eating is completely prohibited. In the acute period, it is extremely important to create maximum rest for the digestive system, and in particular, for the pancreas. This time should be used to stabilize the disorder of metabolic processes, to normalize the production of enzymes for digestion.

Let us repeat that you cannot eat during the first days. If the patient is thirsty, you can quench your thirst with a small amount of alkaline still water: Borjomi, Polyana kvasova, Luzhanskaya, etc. Alkaline water can suppress the secretion of gastric juice, which will allow the pancreas to rest.

In the following days, depending on the patient’s condition, drinking is allowed more and more, gradually moving to liquid and semi-liquid gentle food.

Diet for exacerbation of chronic pancreatitis

In case of exacerbation of chronic pancreatitis, a carbohydrate-protein diet is usually prescribed. Fats in the diet should be limited: they represent a large burden for the pancreas and gall bladder. Only a small amount of vegetable oil is allowed.

Thanks to protein food, damaged pancreatic tissue is restored. Carbohydrates are not prohibited, however, if there is a suspicion of developing diabetes, then easily digestible carbohydrates are not recommended (simple sugars, jam, sweets).

Vitamins are of great importance in restoring the digestive system and strengthening the immune system: vitamin A, C, bioflavonoids and group B.

Daily salt intake should be sharply limited (to reduce swelling of the inflamed gland), at least for 2-3 weeks.

It is necessary to improve the intake of calcium into the body, which can strengthen the vascular walls and reduce their permeability.

In case of exacerbation of chronic pancreatitis, you should switch to liquid and pureed food, which is served warm, without salt, spices and seasonings. At first, pureed soups, non-acidic kefir, liquid cereal porridges on water (oatmeal, rice, semolina), vegetable puree, whipped low-fat cottage cheese, weak tea without sugar are allowed.

Over time, the menu expands: egg whites, jelly, low-fat steamed meat and fish dishes, and white toasted bread are added.

It is necessary to eat in small portions to avoid overeating. It is optimal to eat up to 6 times a day.

Fried, smoked, salted, pickled, and canned foods are prohibited, as well as fatty meats and lard, fatty sour cream, alcohol, and baked goods.

Diet recipes for exacerbation of pancreatitis

  • Potato balls with chicken

We will need: potatoes, chicken breast, carrots, greens, onion, vegetable oil.

Boil the chicken breast and put it through a meat grinder or blender together with boiled carrots and a small onion.

Boil the potatoes and mash them. Form a circle from the mashed potatoes, put some minced meat in it, and make a ball. Place the resulting balls in the freezer for half an hour.

Place the frozen balls in a steamer or oven. If baking in the oven, place the balls in a mold, previously greased with a small amount of vegetable oil. Preheat the oven to 220 °C. Sprinkle with herbs when serving.

  • Pearl barley garnish

We will need: a little vegetable oil, one carrot, one onion, water (about 0.5 l), pearl barley – ½ cup, one tomato.

Pour water into the pearl barley and cook for 45 minutes from the moment it boils. After that, drain off the excess water, add a drop of olive oil, and leave under the lid.

Saute the chopped onion with a tablespoon of vegetable oil, add grated carrots, finely chopped tomato, and simmer for about ten minutes on low heat under a lid.

Pass the pearl barley through a blender, add the stewed vegetables, mix and leave under the lid for another 5-6 minutes.

  • Homemade boiled sausage

Let's take: 700 g chicken breast, 300 ml sour cream, 3 egg whites, a little salt, herbs if desired.

Cut the raw breast and pass it through a blender until it reaches a mushy state. Add the protein, a little salt, and greens if desired.

Pour cooled sour cream into the resulting mixture and mix.

We separate a third of the minced meat onto cling film, form a sausage, pulling the edges together with a thread. Thus, we should get three sausages.

Boil water in a large saucepan, reduce heat after boiling (so that the water stops boiling, but its temperature is maintained). Place sausages in the saucepan and put a saucer on top so that they do not float. Boil for an hour. Then remove from the saucepan, cool, and only then remove the film. Cut and serve.

Reviews of diet for exacerbation of pancreatitis

The food of a person who suffers from acute pancreatitis should be as gentle as possible for digestion. In order not to irritate the mucous membrane of the affected organs, specialists strongly recommend giving up food altogether for the first few days from the moment of exacerbation. According to reviews, many patients note that there is nothing difficult in such fasting, since due to pain and poor health in the first days of the disease, there is still no appetite.

Next, as the patient's condition stabilizes, the first meals can be started. Such food should not be abundant, not hot or cold, and should be as finely chopped or mashed as possible to reduce the load and ease the work of the gastrointestinal tract.

It is better to start eating food after fasting with slimy soups, liquid porridges, weak broths without spices. Over time, you can include low-fat strained cottage cheese, fresh fermented milk products, dry white bread.

Reviews of the diet during exacerbation of pancreatitis can be positive only if this diet proceeds without errors in nutrition, with strict adherence to all recommendations. Acute pancreatitis is a serious disease that will hasten to remind of itself if the diet is not followed correctly.

A diet for exacerbation of pancreatitis often becomes the main diet for patients suffering from chronic pancreatic disease. However, if you do not overeat, do not indulge in bad habits, strictly follow dietary recommendations, after a while the disease will recede, and the function of the pancreas will be restored to the maximum.
