The pancreas is the most important link in the chain of digestive processes. Inflammation of this organ provokes a lot of health problems, and is also accompanied by a significant deterioration of well-being. How to alleviate the patient's condition, adjust the digestive tract, and what can be eaten with the disease? Properly selected dishes for pancreatitis - is the key to a speedy recovery: sometimes it is possible to achieve remission even without the use of drugs, just following a diet that relieves the organ.
Foods and dishes: what can and cannot be eaten?
The standard diet prescribed to patients with pancreatitis is therapeutic table №5, based on thermal and mechanical protection of the digestive tract. Nutrition should be balanced, with a low content of fats and carbohydrates on the background of a high percentage of proteins. The basic rules for patients are as follows:
- During the first two or three days of an exacerbation, starvation is considered the best "food";
- In the future, the products should be chopped, mashed, boiled or steamed as much as possible, but never fried;
- dishes for pancreatitis should be eaten warm (on average about 30-40°C);
- do not overeat: it is better to eat more often, but smaller amounts;
- do not consume alcohol, acidic and spicy dishes, coarse fiber and hard-to-digest foods.
Of dairy products are not under the ban only non-fat cottage cheese and fresh natural yogurt without additives. Sometimes allowed up to 1 tbsp. Low-fat sour cream in other dishes.
When considering fruits and vegetables, here is a list of the most favored ones:
- potatoes, carrots;
- pumpkin, zucchini;
- broccoli, peking cabbage;
- bananas, sweet apples.

Chicken liver is among the most valuable dietary products, but against the background of a large proportion of protein and a small amount of fat, it contains a high percentage of cholesterol. It is this nuance that casts doubt on the possibility of using the product in pancreatitis.
Gastroenterologists explain: chicken liver can be added to dishes if the patient has a diagnosis of pancreatitis on the background of enzyme deficiency. In this case, the menu is introduced boiled or stewed liver - but in small portions (up to 100 g) and rarely (not more than once a week). If pancreatitis is bothered by any symptoms, it is better not to eat dishes with liver.
Chicken liver should not be fried, stewed in large amounts of oil, add spicy spices and seasonings. Salads for pancreatitis

What ingredients can be included in salads when the inflammatory process is subsiding:

- a little vegetable oil, low-fat sour cream or natural yogurt.
Should not be put in salads if you have pancreatic inflammation:
- sausages, fatty parts of meat or fish;
- heavy sour cream, cream, mayonnaise;
- fatty and salty types of cheese;
- seeds and nuts;
- canned and pickled foods;
- raw vegetables.
For example, vinaigrette, a favorite of many, can be eaten by patients, if you do not add pickles or sauerkraut to it. And "Olivier" becomes dietary if the sausage is replaced with boiled chicken breast, exclude cucumbers and peas, and dress the salad with Greek yogurt.
Also good combinations for salads:

Pancreatitis dumplings
Like almost all flour products, dumplings during the exacerbation of pancreatic inflammation are forbidden - regardless of what is used as a filling.

Borscht, cooked in this way, is allowed to eat not only with inflammation of the pancreas, but also with other diseases of the digestive tract. When serving, you can put 1-2 teaspoons of low-fat sour cream or Greek yogurt in the plate.
Okroshka for pancreatitis
Okroshka is an old famous dish, which was consumed mainly in the warm season. Bell peppers are a treasure trove of vitamins, and in stuffed form this vegetable is especially hearty and nutritious. But with pancreatic inflammation there are restrictions on this dish. True, such restrictions are relative: use stuffed peppers in the disease can be used only during the period of persistent relief, and stuffing it should be strictly observing certain rules.
First, let's understand what is meant by "period of persistent relief"? It means that the patient has gotten rid of the acute pain and other painful symptoms associated with pancreatitis, and the doctor has allowed him to make some variety in his diet.
What kind of sweet peppers are allowed for patients with chronic pancreatitis? Peppers are used not raw and not fried, but boiled, steamed or stewed. The skin of the vegetable should not be removed. Also do not add to the dish spicy spices, animal fats, large amounts of salt.
What can be added as a stuffing to peppers? The optimal "stuffing" is boiled rice with vegetables (carrots, onions, pumpkin, celery, etc.). Immediately it should be noted that it is impossible to use such a dish often and in large quantities with pancreatitis. It is quite enough to eat one or two stuffed peppers a week.
Bran for pancreatitis
All varieties of bran are considered not just healthy, but even able to treat some diseases. Does inflammation of the pancreas belong to these diseases?
Bran is a complex product. For example, it is extremely useful for the intestine, but at the same time, it creates an additional load on the pancreas. Therefore, the use of bran dishes with pancreatitis is allowed, but with some clarifications.
In the acute period of the disease from the use of such products should be abandoned: add a little bran in the food is allowed no sooner than 1-2 weeks after the exacerbation. However, even here there will be restrictions: the maximum allowable daily rate of bran in pancreatitis - no more than 30 g. If this rate is exceeded, then the failure of the pancreas will manifest itself with such symptoms as excessive gas, stool disorder, improper digestion of food.
It is also important to drink enough water. When taking bran, you should drink more fluids than usual.
If attacks of pancreatitis occur frequently, it is undesirable to eat bran in its pure form. It is optimal to add them to porridge, side dishes, yogurt. And you can prepare a kind of bran drink:

Sushi, rolls for pancreatitis.
Japanese cuisine attracts many people: the dishes of this cuisine are unusual for us, but very tasty and healthy. On the one hand, sushi and rolls belong to dietary products. Their basic component is rice combined with seafood, so such food is low-calorie, low-fat, predominantly protein, with a large share of useful substances.
But, unfortunately, both sushi and rolls are under a categorical ban for patients suffering from pancreatic disorder. Such food is considered dietary only in relation to nutrition to eliminate excess weight. But with pancreatitis, such dishes are forbidden, and here's why:
- such dishes contain seafood that has not been heat-treated, so the course of pancreatitis can be complicated;

If the patient is an ardent fan of Japanese cuisine, a special variant of cooking is suitable for him: marinated and smoked seafood is replaced with boiled shrimp, chicken meat or cheese, or even boiled vegetables. Nori sheets are not used, nor are ginger, vasabi, or other spicy-spicy seasonings. The addition of a small amount of real soy sauce during remission of pancreatitis is allowed.
Omelettes for pancreatitis

Omelettes may be included in the diet of patients under the following conditions:

- At first it is better to cook omelettes with water, and milk is added when remission is stable;
- Egg dishes with pancreatitis can include no more than two eggs - this is the daily norm that gastroenterologists talk about.
If the norm of chicken eggs for patients with pancreatitis - no more than two pieces, quail eggs are allowed to eat up to 6 pieces per day. In the omelet is allowed to add greens, carrots, a little boiled potatoes, vegetable oil. Over time, as the condition improves, mashed potatoes are already prepared on the basis of potatoes with the addition of carrots, a small amount of warm skim milk.
Soup for pancreatitis
Shchi is one of the many types of vegetable (particularly cabbage) soups. It is prepared mainly on meat broth, which is not in favor of its use in pancreatitis. Another contraindication is the presence of white cabbage in the dish, which also cannot be used for pancreatic problems.

Pancreatitis is a complex and serious pathology, when one wrong meal can have a negative impact on well-being and nullify all previous attempts at therapy and rehabilitation. Selecting dishes with pancreatitis, it is necessary to carefully study their composition, assessing the possible negative impact on the pancreas. Stuffed cabbage for pancreatitis

- you can't roast the vegetables for the stuffing;
- Only lean meat should be chosen and in small quantities, and lard should not be added at all;
- It is ideal to steam stuffed cabbage, but you can also stew them without sour cream and spices, with a little vegetable oil;
- Peking cabbage leaves can be used instead of white cabbage leaves;
- You may eat no more than 4 stuffed cabbage pancakes per week, cooked according to the dietary recipe;
- If pain or digestive upset occurs, the dish should be excluded from the menu.
In addition, you should not forget about the temperature of the food consumed, which should be neither hot nor cold.
Holodeck for pancreatitis
Kholodets can not be attributed to dietary dishes, so it should not be offered to a patient with pancreatitis. There are many reasons for this, for example:
- Kholodets is characterized by high fat content (more than 15%), so it creates an unnecessary load on the digestive organs. Eggplant for patients with pancreatitis is allowed only at the stage of stable remission. The fact is that these vegetables contain components that stimulate trypsinogen, which can increase the inflammatory process. We are talking about such components as alkaloids - organic nitrogenous substances.
At the recovery stage, when the pain and other unpleasant symptoms remain behind, it is allowed to diversify the diet with eggplant caviar, or stewed eggplant. Recall that these vegetables in pancreatitis are not fried, but only baked, stewed or boiled.
Young eggplants without signs of rot and damage are suitable for use. They are washed, cut into cubes, soak in salted water, peel off the skin, bring to readiness in the previously chosen way. Then the vegetables can be chopped with a blender together with boiled carrots, salt and eat as a main dish or with a side dish.
Nutritionists do not advise you to buy stewed eggplant and caviar industrial production, because the composition of such a product is fundamentally different from that of home cooking: often in store caviar is present vinegar, various spices, thickeners, citric acid, garlic and other undesirable for the disease components.
Vinaigrette for pancreatitis
Vinaigrette in the classic version of preparation in pancreatitis is not recommended, because it contains acids (in the form of sauerkraut or pickles), onions, a large amount of beets. But if you prepare this dish according to a special dietary recipe, then it will be quite possible to eat it for patients with pancreatitis.

All vegetables are cut into small cubes, dressed with a couple of spoons of vegetable oil, add herbs and a little salt. That's all: diet vinaigrette is ready.
The resulting dish is an excellent source of vitamins, it is easily digested, gently digested and does not burden the affected organs. But abuse and eat a lot of salad at once is not allowed. Gastroenterologists advise to eat vinaigrette with pancreatitis in an amount of no more than 50-100 g at a time, no more than a couple of times a week, and only at the stage of subsiding inflammation.
Can manti be eaten with pancreatitis?
Manty, as well as dumplings, is a combination of boiled dough and meat filling. This "tandem" is undesirable in pancreatitis, due to slow digestion in the digestive tract. In order to fully digest such products, it is necessary to strengthen the enzyme activity of the entire GI tract and, in particular, the pancreas. Nutritionists classify manty as a heavy product even for a healthy person.

Zucchini fritters for pancreatitis

One of the first dishes that is often included in the menu of various dietary tables is beet. This vegetable dish is not difficult to prepare, hearty, healthy and tasty, but does it not burden the pancreas?
Anyone suffering from pancreatitis, chooses dishes that are not only healthy, but also easy to digest. No one wants to worsen their own health by eating forbidden dishes. Fortunately, boiled beets are not included in the forbidden list of products. Moreover, this root vegetable in many ways even promotes digestion, improves intestinal motility, has a slight diuretic effect.
At the stage of exacerbation of pancreatitis, beet dishes can not be used, as well as most other products. In general, after an exacerbation, vegetables are introduced into the diet gradually, little by little, because the digestive tract must "get used" to the assimilation of fiber after the stress suffered. In the dish you can add fresh tomatoes, carrots, potatoes, onions, herbs. Adding meat, mushrooms, fatty sour cream or cream is prohibited (it is allowed to add no more than 1 tbsp. Natural yogurt or sour cream with a fat content of no more than 10%). Properly prepared beet will favorably diversify the diet of the patient, add vitamins to the body and at the same time will not harm the pancreas at all.

Zucchini - allowed vegetables for patients with pancreatitis: they are advised to consume boiled, stewed or baked, alone or with other vegetables.
Zucchini should be baked until cooked, avoiding the appearance of a brown crust, which creates additional difficulties for digestion. It is allowed to prepare casseroles with rice, pasta, buckwheat, oatmeal, with other vegetables - for example, with carrots or broccoli.

Macaroni and cheese for pancreatitis
Pasta - vermicelli, noodles, spaghetti, etc., are not considered a prohibited product in pancreatitis. - Quality pasta is easily digested by the digestive system, without aggravating the pancreas. But note: we are talking about a quality product made on the basis of durum wheat. Cheap varieties of pasta for a diet with pancreatitis are not recommended, because of their prolonged digestion and creating a load on the diseased organ.
Pasta can be eaten as soon as the main signs of pancreatitis subside - that is, after the acute period of the disease. They are boiled until softened: this should be taken into account, because the variant "al dente" during the diet is not recommended. As a dressing, you can use a small amount of vegetable oil, or non-fat yogurt.
As for such a dish for pancreatitis, such as macaroni and cheese, it can be included in the diet in persistent remission, when the acute and subacute periods of the disease are far behind. Macaroni is boiled, seasoned with a small amount of oil, and top it with grated hard cheese - preferably unsalted and low-fat. Such a dish is allowed to be consumed no more than once a week.
