Our national food culture has a tradition of preparing first courses on rich broths. It is tasty and filling, but is it healthy? Especially if there are problems with the pancreas. Pancreatitis is characterized by the presence of an inflammatory process in the organ, and the presence of fats and many other ingredients in it, which got in as a result of slow gradual boiling, can cause the activation of pancreatic juice secretion. Fortunately, there are some secrets of their preparation, as well as vegetable broths that will not harm, but will only bring benefit.

Vegetarian Diet for Pancreatitis

A properly selected diet plays a huge role in the treatment of pancreatitis. In order to relieve the pancreas, doctors recommend switching to a vegetarian diet from time to time. Such a diet does not contain fats, but only proteins and carbohydrates. Since many raw vegetables contain coarse fiber, it is best to eat them cooked: bake, boil in water or steam, stew. After getting rid of acute attacks, raw ones are gradually introduced, but soft, ripe, not sour. An absolute ban at any stage of the disease on turnips, radishes, radishes, raw onions, garlic, as well as greens: sorrel, spinach. [ 1 ], [ 2 ], [ 3 ]

What soups can you eat if you have pancreatitis?

Liquid, mashed food in the acute stage of the pathology is the best "consolation" for the diseased organ. Chronic course of the disease also requires soups in the daily menu. To compose it correctly, you need to follow the recommendations for dietary table No. 5p, specially developed for people with this diagnosis.

The diet involves preparing first courses in light secondary meat and fish broths, non-concentrated vegetable broths, or best of all, just water, seasoning them with sour cream or butter.

Their consistency should be slimy, without coarse particles: creamy soups or purees.

The list of dietary soups may include:

  • vegetable with rice;
  • potato with meatballs;
  • from zucchini and cauliflower, mashed into puree;
  • in weak broth with oatmeal;
  • with pumpkin;
  • with egg;
  • fish;
  • buckwheat.

Don't forget about milk soups. You can use cereals for it: "Hercules", rice, buckwheat, semolina, corn, etc. [ 4 ]

Can you eat chicken if you have pancreatitis?

Chicken is considered a dietary meat, but against the background of numerous information in the media about what the bird is fed, what drugs are stuffed to prevent death, you begin to doubt whether this is true. In order not to contradict this statement, we will consider poultry, which is easy to buy at the market.

Minced and steamed white chicken meat is consumed even during periods of exacerbation of pancreatitis. After 2 weeks, when there is no need to adhere to mechanical sparing of the digestive organs, chicken meat can be eaten without pre-grinding. It is served with side dishes of cereals or thermally processed vegetables.

Offal (stomachs, hearts) due to their dense structure, which is not softened even by high temperatures, can be introduced into the diet in small doses no earlier than several months of stable normal health. [ 5 ]

Benefits

The absence of solid particles and the concentration of substances necessary for the body make broths a useful dish for recovery after operations, various intestinal infections, the inability to eat food of a different consistency due to illness, physical and mental exhaustion, to increase appetite, and stimulate the production of gastric juice.

What broths can be used for pancreatitis?

Obviously, not all types of meat are suitable for broths for pancreatitis. Let's consider those that can be consumed:

  • chicken broth - acute pancreatitis excludes the possibility of eating this dish. The reason lies in its ability to activate the production of pancreatic enzymes, which is fraught with aggravation of the condition: pain syndrome, nausea and vomiting. It may appear in the patient's menu no earlier than 5-6 months after the exacerbation.

Before cooking, remove bones, skin, fat, and it is best to use white meat from chicken breast. Fill it with water, cook for 15-20 minutes after boiling, then drain, add new water and bring to readiness (determined by the meat). Spices, except for a small amount of salt, are not used. This is how the secondary broth is cooked from any meat;

  • vegetable broths for pancreatitis - their main advantage is the absence of fats and the presence of vitamins and minerals, which remain in small quantities after cooking. Neutral-tasting vegetables such as carrots, potatoes, cauliflower, pumpkin, and zucchini are best suited for it. You can drink it by extracting the vegetables; soups are also prepared on it. To make it richer, add butter or sour cream;
  • meat broth for pancreatitis - beef pulp is best suited for it, and better veal, but not pork. Bone broths are also too rich and harmful for the pancreas, because they provoke increased secretion of pancreatic juice. Beef broth is prepared according to the recipe of secondary ones. It is drunk, adding finely chopped greens or soups are cooked on it;
  • fish broth for pancreatitis - it is used to prepare fish soup. For it, you need to take low-fat varieties of fish, strain it when ready and only then add other ingredients, except for spices. All liquid dishes should be eaten only warm;
  • Turkey broth for pancreatitis is the best meat for dietary dishes. It attracts nutritionists because it is low in calories, has little cholesterol, collagen and elastin, its protein is 95% absorbed by the body, and is non-allergenic. Turkey is valuable for pancreatitis because it does not cause an increase in pancreatic secretion. All the rules for preparing broths also apply to this meat: the breast is used, the first broth is drained. Liquid dishes on it are consumed during a period of stable remission.

Contraindications

Broths are contraindicated in cases of gout, hypernatremia, kidney disease, and gallstones.

Possible risks

The negative side of broths are extractive substances - individual chemical compounds released from meat and fish (to a lesser extent) during cooking. But if you drain the first broth, you can avoid possible complications that can affect the digestive tract.

Soup recipes for patients with pancreatitis

Knowing and applying the basics of dietary nutrition for pancreatic disease, you can prepare a variety of dishes and not suffer from certain restrictions. In order to reduce the load on the diseased organ, mucous soups are prepared. Some cereals give this consistency:

  • rice soup – the cereal is boiled until half-ready. In another saucepan, vegetables (carrots, celery root, parsley, onion) are boiled in a weak broth. After they are ready, they are removed and rice is thrown in, cooking until slimy;
  • barley - can be cooked according to the previous algorithm, no need to pre-boil the cereal;
  • oatmeal - this can be done with either broth or milk. Boil the milk, add the cereal, a little salt and sugar. Cook, stirring until medium thick.

Chicken broth soup for pancreatitis - there are a great many recipes, here are some:

  • homemade noodles - break an egg, add salt, combine with flour and mix until a solid mass is obtained. Roll out thinly and cut into narrow strips. Throw into boiling broth, add herbs when serving;
  • vegetable - put pumpkin, broccoli, cauliflower, carrot rings into the broth, boil. Using a blender, turn into a puree, add a spoonful of sour cream to the plate.
